DD loves the potatoe and corn soup I make during the cold months. I was using a mix (Bear Valley, I think) as a base and then doctoring it up with our own baked potatoes, corn, bacon and cheese. But, now that we've been doing less packaged and more from scratch cooking the mix tastes like plastic and chemicals. We don't like it anymore.

Any of you great farmgirl cooks have a good recipe you'd lke to share - the kind that grandma use to make?

Oh Denise! There are SO many ways to make sweet potato soup!!! I usually make a curried sweet potato, OR, a soutwestern sweet potato (in which you can also substitute pumpkin, or butternut squash).

They are broth based soups with cream added later...

This is the sweet potato I make all the time--everyone loves it, and it's great this time of year. The house smells DIVINE!

The cookbook Laurels Kitchen has an amazing potato cheese soup recipe!!! My kids love it!

Here is the one I mentioned...it's from Funky's Blackstone Grill, which was a super popular restaurant in the Kenwood area....

Looks like this is the "low fat" version from 24 grams of fat per serving, to 8. That's alright by me!

1 tblsp butter
2 cups diced onion
1/3 cup of flour
3 cups chicken broth
1 can of low fat cream of chicken soup
1 1/4 cup milk
1/4 tsp salt
1/2 tsp basil
dash of tabasco
1/2 cup cooked diced potatoes
1 cup of mashed potato flakes (for heavier texture)
1/2 bag of shredded cheddar cheese
2 tblsp chopped green onion
Bacon, fried and crumbled

melt margarine, saute onion until tender. Add flour, stirring well. Gradually whisk in broth and soup; bring to boil. Add potato flakes and cook, stirring, 15-20 minutes. Add milk and cook for 10 minutes more, being careful not to boil. Add potatoes, salt, basil and tabasco, stir, then add cheese last, stir until melted. Sprinkle with bacon and green onions

They all sound so good. We're suppose to get our share of the rainstorm y'all have already seen, so this weekend we will stay home and make soup and I'm going to try a no knead bread recipe I saw in Mother Earth News.

Here is my favorite cabbage soup and the best part is it's really easy and quick. It has potatoes in it - that's why I am posting it here for you.

CHEESE AND VEGETABLE CHOWDER
4 cups water; 3 cups shredded cabbage; 1 cup finely chopped Canadian style bacon; 2 large carrots, thinly sliced; 1 5.25 to 5.5 oz. pkg. dry au gratin potato mix; 1 cup milk; 1 tsp. cornstarch; 1 cup green beans.
In a 4 quart dutch oven combine the water, cabbage, bacon, carrots, and the dry potatoes with sauce mix. Bring to boiling; reduce heat. Simmer, covered, for 15 minutes. Combine the milk and cornstarch; add to soup along with beans. Simmer, covered,for 10 to 15 minutes more or until beans are tender. MAkes 4 - 6 main dish servings.

I'd be glad to, Jo. In fact, I haven't made it in a while (been on a sweet potato soup kick lately), so I may just make it up for this weekend! Thanks for the compliment--I love to cook!

Jonni, I'm interested. You always write about such great meals that you prepare...so when you have time, please post it or email it to me. I like Dennise's recipe too, but yours sounds over-the-top divine!

I have one from a local favorite restaurant--it's cheesy, though, not like an Irish potato soup that is simply cream based, but I actually prefer it. It has bacon and green onions also. You can add corn or what have you, and it makes a considerable amount--freezes well, too.

Let me know if you're interested and I'll dig it out of my file.

This is one I tweaked from http://www.RecipeZaar.com. I have made it without the cream of celery soup, just sauté some chopped celery and use that. If you are short on potatoes I have used instant mashed potatoes to thicken it up. The boys love it, especially when I top it with grated cheese and crumbled bacon.

Easy Potato Soup4 - 6 servings

* 6 medium potatoes, peeled and diced
* 5 cups water
* 1 can condensed cream of celery soup (10 3/4 ounce)
* 2 cups milk
* 1 cup chicken broth or water
* 1/8 teaspoon pepper
* salt to taste

1. Peel and dice potatoes (the smaller you dice, the faster they cook).
2. Place in pan with enough water to cover potatoes.
3. Cover and cook potatoes until done.
4. Drain water and return to pan.
5. With a potato masher, mash 1/2 of the potatoes (this will serve as your thickener).
6. Add cream of celery and milk. Stir and heat on low, stirring frequently until desired temperature is reached.
