Posted - Nov 28 2007 : 11:18:36 AM i made this one for thanksgiving and it was amazing! i impressed myself! i think it qualifies as easy... but you do have to stand at the stove for awhile and stir constantly... it is worth it!

Posted - Nov 28 2007 : 11:05:37 AM Here's one that makes it's own crust...how easy is that! I'm not sure it would qualify as a "cream" pie, but it does taste good!
Beat two eggs until light and fluffy. Mix in 1 cup of milk, 3/4 cup sugar, 3 1/2 oz. flaked coconut, 1/4 cup flour, 1/4 cup melted butter, 1/4 tsp. baking powder and a pinch of salt. Pour into a buttered and floured pie plate. Bake at 350 for 40 minutes or until firm.
