Hello, It has been awhile since I have chatted. But my husband is in need of a coconut cream pie. I cant seem to find one that is an easy one...Not sure if there is one that is easy. If anyone can help my husband will surley love it.

i made this one for thanksgiving and it was amazing! i impressed myself! i think it qualifies as easy... but you do have to stand at the stove for awhile and stir constantly... it is worth it!

Here's one that makes it's own crust...how easy is that! I'm not sure it would qualify as a "cream" pie, but it does taste good!

Beat two eggs until light and fluffy. Mix in 1 cup of milk, 3/4 cup sugar, 3 1/2 oz. flaked coconut, 1/4 cup flour, 1/4 cup melted butter, 1/4 tsp. baking powder and a pinch of salt. Pour into a buttered and floured pie plate. Bake at 350 for 40 minutes or until firm.
