Really easy sweet potato soup. . .Bake some extra sweet potatoes when you're using your oven and you have the beginning of this soup! I took 3 baked sweet potatoes, took the skin off, and put these plus 6 cups of chicken broth (it's chicken butchering time!!)into the blender and blend till smooth. Add a bit of salt and heat up and eat! Even the kids loved it! Yummmmmmmmmm and probably kind of healthy too!

I make one similar, but put curry and a little cumin in...nice combo of sweet and savory. Warms you up quite nicely on days like we're having (rainy and cold!)

That sounds like my kind of soup..yum!!! I will be making that for sure when I get back from my trip. I love sweet potatoes too!!
