Spinach & Lentil Salad w/ Toasted Walnuts

1 C water
1/2 C brown or French lentils, rinsed and drained
(I use organic canned)

1/2 C chopped red bell pepper 1/2 C chopped green onion
1/4 C chopped flat-leaf parsley
1/4 C chopped walnuts, toasted
6 C torn spinach or mixed salad greens
12 oz cooked chicken breast, sliced
1/4 C red wine vinaigrette

In a small saucepan combine the water and lentils. Bring to boiling; reduce heat. Cover and simmer for 20 to 25 min. or 'till lentils are tender and most of the liquid is absorbed. Drain lentils and place in a medium bowl. Stir in bell pepper, green onions, parsley, and walnuts.

Divide spinach among 4 serving plates. Top with lentil mixture and chicken. Drizzle with red wine vinaigrette.

Since you are posting some great recipes here, might I humbly suggest that instead of calling them Recipe No. 1,2,3 and such, that instead you use the recipe title as the subject line?
I know it would help me, at least, track back through the postings to find the recipe that "I know I saw posted here somewhere..."
