Libbies question about using the mix for a coffee cake prompted me to adapt a TNT recipe I've used for years. It's a winner!
1 1/2 C. MJF Budget Mix (I used the white, 'cause that's what I have)
1/2 C. unsalted butter, softened
3/4 C. granulated sugar
2 large eggs
1 tsp vanilla (my hand always slips a bit extra in the bowl)
1 C sour cream
1/2 C. finely chopped pecans (optional)
1 Tblsp ground cinnamon

Stir 1/4 C sugar with cinnamon in small bowl and set aside.
Grease an 8 or 9 inch square pan. Preheat oven to 350, with rack in center.
In large bowl, combine butter and 1/2 c. sugar until blended.
Beat in eggs, one at a time and vanilla.
Beat in half of Budget mix, just until blended.
Stir in sour cream and then remaining budget mix.
Stir in pecans if desired.
Spoon about half of batter into pan, top with half of sugar/cinnamon mixture. Scrape rest of batter into pan and top with rest of sugar/cinnamon mix. Use a butter knife to swirl the batter for a marbled effect.
Bake at 350 about 35 minutes. Test by inserting toothpick in center. If batter still clings, bake another 5 minutes and test again. Top will also spring back if lightly touched when it's done. Cool in pan on a rack for 15 minutes. Cut into squares and serve warm.

I've added chocolate chips to the batter, which is also good. Many other goodies can be added, such as chopped dates, dried fruit bits, etc. Just keep them to about 1/2 cup so as to not weigh the batter down. The sour cream transfers the batter into a light, airy cake that is very tender.
If we ever do another cookbook, or if Mary Jane does one with her products, I'll submit this one.
