I started out looking for an apple thread on here, but well.. I didn't look very hard. Some days its easier just to start the new thread than to go looking! If I missed it though I'm sorry. Hope I'm not steppin on any toes!

My situation: I have apples, apples, and more apples! Crates of apples! All from a trip to an orchard in my homestate of West Virginia. And while we are indeed apple fans, we'll never be able to eat that many raw before they go bad. I don't have a canner yet, but I do have a dehydrator and a seal-a-meal machine. And one massive freezer! So I'm thinking I'm going to make a Bird's Nest Cake tonight using some of them and start working on either dehydrating apple rings or making applesauce to freeze. Anyone have any other suggestions? They're red delicious variety and they're pretty large sized. Ever seen that movie Attack of the Killer Tomatoes????? That's what it feels like around here! Those apples.........they watch me (insert cheesy horroflick music here)..........

Oh YUM Audrina, They would make such sweet little gift cakes for the holidays, thank you for the recipe! I have a huge bunch of apples!

How about apple cake-this is the recipe that a make when I've got lots of apples. It freezes well-and it's great for breakfast/snacking...

2 cups sugar
1/2 cup oil
2 eggs
4 cups diced apples
2 cups flour
2 teaspoons baking soda
1 teaspoon nutmeg
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups chopped walnuts

Combine sugar,oil,and eggs in a large bowl, stirring until well mixed.
Stir in diced apples and nuts.
Sift together flour, baking soda, nutmeg,cinnamon and salt, then add to bowl.
Stir all ingredients together to form a batter (do not overmix).
Pour into 9x13 inch greased pan.
Bake one hour in a 350 degree oven

Also, you might want to check out Nin's blog site (peachyhollow.com)-she's posted the recipe for an apple spice cake that looks really scrumptious!

I can't take credit for the recipe and how much you gets, seems to depend on how much moisture the fruit has (very rookie girl with little jam experience)But it is good. I've monkied with it a bit a had pretty good success with apples, pears and some peaches, mind you the peaches were hard as baseballs, but they did turn out ok spiced with ginger.

*you can also dehydrate the apple slices to use for dried decoaration if not eaten.
Of course more practical to eat them though..but just another option for a few of them.
*I'd suggest utilizing your crockpot as well for creating apple butter.
*if you want to eat some of them fresh, try chopping a few up into your salad..and adding a poppy seed dressing and some walnuts or sunflowers with some chicken or turkey. it really adds a nice element to a lighter salad.
*You can chop up a few of them then pour in a canned of drained fruit cocktail and add some whipped topping for a dessert.
*you can create apple turnovers... create a pie crust and cut out smaller circles, fill with sliced ,peeled apples,season with a little sugar and cinnamon and fold over,crimp edges and bake. Freeze for an easy "warm up" breakfast treat or snack for later.
*premake some apple pies for Thanksgiving/Christmas.

Do you have a cider press? That seems the best way to use up apples after all other avenues are through. We used to have apples and grapes, while my kids still love apples they do not like grape jelly anymore.lol.. If you do have a good freezer---applesauce..apple pie and apple slices to use later for whatever you want. Go for it...I'll be watching for the movie or at least news at 11. MB
