 Bran and flax muffins with currants and chocolate

Pleasing to the digestive system and the sweet tooth.

1C bran meal
1/2C flax meal
1/2 C brown rice flour
1/2 C unbleached, all purpose flour
2 1/2 tsp baking powder
1/2 t salt
1/3 c raw sugar
1 organic egg
1 tbsp soft sweet cream butter
1/2 c red currants
about 1/2 c chocolate chips

stir all until just combined and moistened. Bake at 400 degrees for 25 minutes. Serve with sweet cream butter or a nice jam-maybe with jalepenos in it!

Also nice with hot mulled apple cider.

Nice...where can I get brown rice flour??? I can't remember seeing it at a health food store but I'll bet it's there...if I didn't have the currants I'll bet dried cherries or cranberries would be good too. Thank you!
