My Cajun S-I-L gave me a copy of The Basics of Creole Cooking booklet and it helped me save face more than once while preparing a meal for my DH's Louisianan family. Since I'm not a southern gal by birth, they were lookin' for a chance to razz me. Didn't happen.
If a farmgirl from Colorado can make a roux that impressed my "deep-south" inlaws...gals it's a sure bet you can too!
(The gumbo recipe is fool-proof).
