Posted - Oct 15 2007 : 07:11:10 AM So, I found this recipe in one of my Bon Appetit's that I was recycling for a local school fund drive (I had to go through all the mags and clip out stuff that I thought I might need--lord only knows when I'm going to have the time to make it all!!!)...anyway, this was last night's dinner with Southwestern Pumpkin soup. There wasn't anything leftover!
Grilled Chicken Sandwiches on Focaccia with Sage Pesto.
Make the pesto like you would basil pesto, but use sage--YUMMY! Pound the boneless skinless chicken breasts thin, and brush with olive oil and s & p--then grill. Slice focaccia, lightly butter and grill just before chicken is done. Spread light layer of mayo on bottom of focaccia, then place pieces of thinly sliced granny smith (or other tart apple). Put grilled chicken on next Put a piece of white, mild cheese over chicken--I used Havarti Brush top of focaccia with sage pesto and place on top.
I'm tellin' you, this was gone in about a second, and took about that to make, even with the grilling. The combination of flavors was incredible, and the apple really made such a great addition--in fact, I don't think you could make the sandwich without it.

I made a sandwich for the contest that is an apple, stinky cheese and jam sandwich, grilled on the George Foreman. Delish!

Posted - Oct 15 2007 : 08:12:35 AM Katie-- That's kindof what I was attempting--we're still having nice, warmer evenings, and I have an over load of sage for some reason--it's the herb that did the best this year with our drought!
I could eat that sandwich again today...and may start putting apples on my sandwiches from now on!

That sounds deee-lish-ush! I'll have to try it soon. The pumpkin soup sounds like a great accompaniament to the sandwich, too. A perfect meal for the season!
