Posted - Sep 25 2007 : 3:23:54 PM I need some ideas. I made egg noodles and couldn't stand just throwing the whites away. What can I make with them? There were only 6, not enough for an angel food cake and I don't wanna make merugine.

Posted - Sep 25 2007 : 8:26:14 PM In the Art of the Egg issue there are directions for using egg whites as a facial mask - just whip them up and apply to your face. When dry, wash off the egg and dry skin cells. You can also use the egg yolk for this same purpose. I do this when I make angel food cakes (hard for me to waste anything). Vicki

Posted - Sep 25 2007 : 4:46:02 PM Dark Chocolate Mousse
5 1/2 oz. bittersweet chocolate, chopped 14 oz. cold heavy cream 3 egg whites 1 oz sugar Whipped Cream and shaved chocolate for garnish
Place chocolate in a large bowl in a double boiler at low simmer. Stir until melted. Turn off heat and let stand.
Beat cream until soft peaks form. Set aside at room temp. Whith a mixer whip the egg whites to soft peaks. gradually add suggar and continue whipping until firm.
REmove chocaolate from over the double boiler and use a whisk to fold in the egg whites all at once. When almost incorperated add in the whipped crem. Seperate into serving dishes and refridgerate at least 1 hour. Top with whipped cream and chocolate.
I make this when company comes and it is ALWAYS a big hit!
