We've had our first killing frost!

I need green tomato ideas and recipes.....help!

I just came across this recipe and remembered this post. I found it in Gifts of Food by Susan Costner.

Green Tomato Conserve yields 2 pints

12 to 15 medium-sized green tomatoes, cored, cut into small cubes (about 12 cups)
4 lemons, sliced very thin, with seeds removed
4 cups sugar
Grated rind of 1 orange
1 cup golden raisins
2 Tablespoons orange brandy



In a large, lidded enameled casserole dish (I would assume you could use anything non-reactive, yet stove-top safe as well, but I wouldn't use copper or aluminum) make layers of: 3 cups tomatoes, one third of the lemon slices, and one third of the sugar. Repeat twice more, then end with one more layer of tomatoes. Cover and marinate for 24 hours.
Add the orange rind to the casserole and cook the fruit over very low heat, stirring occasionally, for 2 hours.
Sterilize mason jars, lids, and rings. Prep water bath for processing jars.
Add the raisins and cook for 1 more hour, until the liquid becomes a glowing amber color. Stir frequently during this cooking to keep the caramel from burning. Remove casserole from the heat and stir in the orange brandy.
Spoon the conserve into hot, sterilized jars, filling them to within 1/4 inch of the rims. Wipe the rims clean and seal the jars with the lids.
Process the jars in the water bath for 10 minutes.

She says that she has used this for "everything from ground beef to ice cream."

Oh, Alicia, too bad you didn't cover your garden. I've been covering mine for over a week now. But fried green tomatoes are just wonderful. Last year, I made a green tomato salsa that dh just loves.

Fried Green Tomatoes! I can eat them by the gallon full! Man it got down to 55 the other night and I though that was cold!
