Caramel Apple Butter
3lbs apples 2c sugar 1/4tsp ginger 1/2tsp clove 21 caramels
Puree apple to 7cups. Place in Crockpot with the 2c sugar. Cook pulp to butter consistency (3 to 4 hours). Stir in ginger, clove and caramels. Cook until caramel are melted. check temp for at least 140 degrees to 165 degrees. Hot water bath for 10 minutes.
Being the farm girl I am, I have to doctor the recipe. I added two shakes of nutmeg and cinnamon, each. This is how I found the recipe. Here were my questions... What is butter consistency? What temp do I cook at? Lid on or off?
Here's what I did, watching it progress. I cooked it on high in the crockpot for four hours. For the last hour, I took off the lid for it to thicken up. I still don't have a clue what "butter consistency". The apple butter turned out so wonderful, I don't care.
I am going to post the fruits of my labor thus far on my blog.
