Posted - Jul 23 2007 : 10:59:53 PM end of the paycheck meal? If we all submit one, we should have a nice variety to chose from when we're running a little short. At our house, cheese omelets, hashbrowns and toast seem to appear when we're short on groceries. I will also fix rice and beans and cheese if we're meatless. How about your house? |

Posted - Jul 25 2007 : 07:21:02 AM Pasta E Fagioli (Olive Garden Style Soup)
2 lbs. ground turkey 1 onion, chopped 3 carrots, chopped 4 stalks celery, chopped 1 can diced tomatoes, undrained 1-16 oz. can red kidney beans, drained 1-16 oz. cannelloni beans, drained 30 oz. chicken broth 3 tsp. oregano 2 tps. dried basil 2 tsp. cracked pepper 5 tsp. parsley 1-20 oz. can V8 Vegetable juice 8 oz. Ditalini pasta or can substitute for WW pasta
-Boil water, salt and oil and cook pasta ‘til al dente. -Brown ground turkey in a skillet w/ extra virgin olive oil -Drain fat and add to crock pot with everything except pasta. -Cook on low 7-8 hours or high 4-5 hours. -During last 30, add pasta. Cook on low.*(or cook pasta and mix before serving to prevent soup from thickening too much).
Serve with soft whole wheat breadsticks and an Italian salad.

1 (7 1/4 oz.) box macaroni & cheese dinner 1 (12 1/2 oz.) can tuna, drained & chunked 1/4 tsp. garlic powder (optional) 1/2 c. shredded Cheddar cheese 1 c. frozen green peas 1/2 c. milk 1 tsp. dried Italian seasoning 1 tbsp. grated Parmesan cheese
Prepare macaroni and cheese according to package directions. Mix in remaining ingredients except Parmesan cheese. Pour into a 1 1/2 quart microwaveable serving dish. Cover with plastic wrap and microwave on high for 2 minutes. Stir casserole and continue heating on high for 2 1/2 to 3 1/2 minutes or until cheese is melted and mixture is heated through. Sprinkle with Parmesan cheese. Makes 5 to 6 servings. For conventional oven; bake for 20 minutes, no stirring necessary.

Posted - Jul 25 2007 : 06:50:09 AM Hmmm....I always like to make a quick meal that satifies the tummy. Here's a fun thing to do with ground beef ( I use ground turkey). Add mashed potatoes, green beans and peach slices on cottage cheese and you have a yummy quick meal!!!
Marvelous Mini Meatloaves From Kraft Food & Family Magazine (6 servings)
Take 1 lb. extra lean ground beef/turkey, 1 pkg. (6 oz.) STOVE TOP Stuffing Mix and 1 cup water and mix & match your recipe from these options...
seasoning options: A. 1 tsp. Italian seasoning B. 2 tsp. chili powder C. 1 tsp. dried oregano leaves D. 1 tsp. garlic powder
add-in choices: A. 3/4 cup spaghetti sauce B. 3/4 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa C. 3/4 cup chopped roasted red peppers D. 3/4 cup KRAFT or BULL'S-EYE Original Barbecue Sauce
cheese possibilities: A.3/4 cup KRAFT Shredded Mozzarella Cheese B. 3/4 cup KRAFT Shredded Mexican Style Cheese C. 3/4 cup ATHENOS Traditional Crumbled Feta Cheese D. 3/4 cup KRAFT Shredded Cheddar Cheese
Then follow our 3 simple steps:
PREHEAT oven to 375°F. Mix meat, stuffing mix, water and the seasoning until well blended. Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation in center of each with back of spoon. SPOON add-ins evenly into indentations in meatloaves. BAKE 30 min. or until meatloaves are cooked through (160°F). Top evenly with cheese; continue baking 5 min. or until cheese is melted. Let stand 10 min. before serving.

Posted - Jul 24 2007 : 1:01:46 PM Sherri-its honestly just that. As much burger as you want to blend with rice mixed with a can of cream of mushroom soup. There are no other directions than that! It's so simple and so tasty....I think I may make some tonight jsut for the yummy of it. I am sort of salivating over it just thinking of it!

Posted - Jul 24 2007 : 10:26:12 AM Mine is spinach and navy bean soup served with fresh baked bread. This is easy to make in my slow cooker so it cooks while the bread rises. Also, since chocolate chips are a "staple" in my cupboard, I never feel "broke" if I can bake a batch of cookies for dessert. |

My mom called it "poor man's chow mein" and her mother made it all the time but with white rice and ground beef. its soooo tasty and is total comfort food for me.

Posted - Jul 24 2007 : 08:16:57 AM 12 bean soup with cottage ham in the crock pot; soak beans overnite, put in bottom of crock, add ham, onions, vege stock, s & p to taste, cayenne, and a couple of bay leaves and go to work. When you come home, puree half the bean mixture and put back in, make some Jiffy cornbread and VOILA!
tuna casserole (dh's fave)--any pasta will do, add some peas, milk and cheese, bake it and you're on! We're never meatless--so much in the freezer--(or without a half used bottle of good red wine) so beef stew is always right up there, with a few potatoes and carrots, too.
I make a "clean out the fridge" quiche for "broke weekend brunch", too.

Posted - Jul 24 2007 : 06:40:28 AM Pork jambalaya-( gotta use an iron skillet) pork steak(cut in cubes) onion ,rice and seasoning- It's a one dish meal!
Brown the pork(cut into cubes)a little or a lot if you have a piece or two of sausage in "leftover land", throw that in when the pork is dark brown toss in some chopped onion and let sizzle for a minute or two and toss in a cup of rice 2 cups of water salt & pepper and stir around once or twice and cover & simmer for 18-20 min.
Truly a cajun staple.You can add lots of other things but this is the basic recipe. Enjoy! Autumn

Posted - Jul 23 2007 : 11:21:39 PM ours is egg salad, maybe with a minimal amount of leftover chicken thrown in, or house fried rice. my dh would probably say beans and cornbread, the old standby. but then, ya know, how could we be out of money, i still have some checks left?
