Posted - Jul 17 2007 : 2:52:55 PM I went to a local farmer's market last week and bought *waaaaaaay* too much produce. So on Sunday, not wanting it to spoil, I turned it into an *awesome* salad! Here is what I made, to the best of my recollection (I'm a "...dump cook..." which means I rarely measure, I just eyeball it ):
1 medium red bell pepper, diced 1 medium yellow bell pepper, diced 1 medium orange bell pepper, diced 2 medium to large cucumbers, diced 1 small red onion, minced 3 Tbsp dill weed 4 Tbsp lime juice 3 Tbsp canola oil 2 Tbsp rice wine vinegar 1/4 C. shredded romano cheese Salt / Pepper / Seasonsing to taste
Mix together in a large bowl. Cover and refrigerate for 2-3 hours so that everything blends.

Posted - Jul 25 2007 : 3:50:26 PM Oh, Kaylyn, I'm so sorry you don't get to enjoy huckleberries. We have small patches around here and when you find one, you NEVER give up your spot to ANYONE! So far, I have not found a reliable spot. If you buy them here, they are $10/lb! So, unfortunately, anything made with huckleberries is somewhat expensive, too. You could get lucky and find Annie's All Natural Huckleberry Vinagrette in the salad dressing aile. It's not as good as home made but it's pretty good. I buy it every now and then.

I sure wish that huckeberries grew around here. I had them in jam form in Salt Lake City a few years back. Darn, were they good!!

I have a favorite hot weather salad too: spinach leaves, seedless grapes, strawberries and/or raspberries, currents, chunks of cucumber, broccoli, mandarin orange slices, raw cashews and flax seeds. Drizzled with orange juice or huckleberry vinagrette. Very refreshing and surprisingly filling too.

Posted - Jul 19 2007 : 08:13:16 AM For a simple and refreshing summer salad, dice cucumber and tomato up, toss with lemon juice & pepper to taste. A simple, Persian, summer salad recipe that is surprisingly delicious.

Posted - Jul 18 2007 : 12:26:35 PM In the hot summer months my mom would make "kitchen salad". Lettuce and all the leftover veggies and meat from the week. What ever we had went into it. Tossed with our favorit dressing and served with crackers and fruit, it was the perfect hot weather meal. And, clearing out the fridge was just an added bonus. |

I saw on the Barefoot Contessa on the food network today she made a salad that was sliced avocado rolled in lemon viniagrette with grapefruit sections over that and then more lemon viniagrette drizzled over..my kind of salad too. I am going to have to try your salad..yum!!!!!!
