Posted - Jul 17 2007 : 11:23:46 AM Just to let you know, I made a batch this morning from this recipe....looks yummy. I cooked it for a fairly long time till it started to thicken.

Posted - Jul 16 2007 : 1:05:34 PM I just bought apricots today at a farm market and plan to put up jam with them I am using the recipe from the Ball canning magazine (which by the way is a great publication!!)
2 quarts peeled and crushed apricots 1/4 cup lemon juice 6 cups sugar
Combine apricots and lemon juice ina large saucepot. Add sugar, stirring until sugar dissolves. Bring slowly to a boil. Cook rapidly to gelling point. As mixture thickens,stir frequently to prevent sticking. Remove from heat, Skim foam if necessary. Ladle hot jam into hot jars, leaving 1/4 inch headspace. Adjust 2 piece lids and process for 15 minutes in a boiling water canner.

Posted - Jul 10 2007 : 07:26:39 AM I don't have a tree. They won't grow here. It's too cold. Close by in Willard, Utah they have what is called Fruit Row. My neice picked up a bushel of the little buggers for me. I really don't like them either, but DH adores them. What we do for our men. :o}

Posted - Jul 09 2007 : 8:40:01 PM I'm not actually fond of apricots or apricot jam, but use to make one that my friends said was wonderful.
I just used the recipe from the Ball canning jar recipe book. The only difference was that it took so long to collect enough apricots to make a decent batch that most of the fruit was really ripe. No cutting the fruit, just peel and squish it off the pit. Must have been the increased sugar content in the fruit that made it good. Don't really know - never tried it. |

My Mom's and both grandmothers canned all kinds of jams and jellies and vegatables. My dad's mom even canned gooseberries jam. It is good;but kinda tart taste.
