I made these swiss chard patties for lunch today from the chard I picked this morning. Here's the recipe if anyone is interested in trying it.

Swiss Chard Patties

1/2 c cooked, chopped swiss chard (I steamed mine) drained really well
1 c dry bread crumbs
1/4 parm cheese
1 egg, slightly beaten
6 drops of hot sauce
salt and pepper, to taste

In a bowl, mix chard, bread crumbs, cheese ans seasonings together. Add egg and stir it all together til it sticks to itself. It may seem a bit dry at first but it will cling together, using your hands press and form the mixture into 3 patties.

In a large frying pan, heat 1/4 olive oil and fry patties til brown on both sides.

Serve with a tomatoe base sauce ( I use a homemade marinara sauce )

Cindy, it's almost to pretty to eat, lol I cut mine younger than most people. Must be I am to impatient to wait. All those colors make it hard to resist. Have fun trying it, hope you like it!!

Mikesgirl.. in my area it is called Bright Lights.. I think it is all about the same seed, maybe just different names? It's been yummy so far.

Hope your friends will like these Dawn. It's handy to have something to pull together that is fast and easy to prepare. The nice things about these patties is you can serve them much like hamburger patties to your vegetarian friend by using the same condiments you wouwld with beef burgers. These patties really stand up and hold their shape.
I have a basic "White Bean" pattie recipe that I am forever changing up the ingredients I use to make them. A lot of times I use what is in the cupboard, even if it is not in the original recipe. That's the fun part. I vary the bean part between.. white, chick pea, black bean, black eye peas. If you'd like that recipe, let me know and I'll post it. They keep really well too.

Thanks for the recipe Tracey. Your swiss chard looks good too. I'll try it soon. We have friends who are vegetarians. I like to come up with different main dishes for them besides pasta. I'm sure they'll love this one.

Hi Cindy, it is just like spinach, in my opinion. I cook it the same ways and use it like I would with and dish I use spinach in. I do harevst it on the younger side and it is never tough.

You know Tracey, I hate to say I have never tried chard! I don't even think I would know it if I saw it. I LOVE spinach and other greens so I'm sure I'd like it. I will have to be on the look out and try your recipe. My husband would be thrilled with it too I'm sure, thanks!
