I just cut a bunch of lettuce from my garden and I can't find my reciepe for wilted lettuce. Anyone have a good one they would like to share?

MAry I make the same recipe as you but with out the potates and eggs. The green onions and raw onions make my tummy hurt so I have to cook them. When we have wilted lettuce we usually have fried potatoes and cornbread to go with it.

Yum! Makes me hungry. I haven't had wilted lettuce for years. It was a regular on the summer dinner table when I was gorwing up. Thanks for sharing the recipes.

These recipie sound great! Also, when lettice is abundant I use it in stirfy and stew. Tastes great and nothing goes to waste.

My Dutch grandmother taught me to make a wilted lettuce salad we call Kole Slaw (check my spelling). It's a lot like Alee's

Dutch Kole Slaw
1 lg. bunches leaf lettuce
4-5 potatoes boiled and smashed not quit mashed
2 tsp. sugar optional ( I don't like the sugar but some family members do)
1/4-1/2 cup chopped onions
8 slices bacon more or less
1/4 c. cider vinegar More or less to taste. I like LOTS of vinegar so I add more
4-5 hard cooked eggs cut in chunks
Boil the potatoes. Tear lettuce into bowl, season with salt and pepper. Add onion raw or saute with the bacon. Fry bacon crisp and crumble. Add some of the vinegar and sugar to the drippings, taste before you add it all, bring to a boil. Add the hot smashed potatoes and hot chopped eggs to the lettuce. Pour dressing over lettuce potatoe mixture. Toss until wilted. The additon of more eggs and potatoes makes this a meal, at least for me. My men still want meat.

We used to make French Peas. You line the saucepan with the lettuce, put the peas in, with a little water and butter,& a tsp. of sugar, cover the peas with more lettuce and steam. I don't know why but they taste really good. (Maybe it's the butter and sugar huh?) Try it!

This one is from Maya Angelou's "Halleleua! The welcome table" It's her cookbook and it's wonderful.

6 slices bacon
6-8 green onions (white and green parts) sliced
1 tablespoon sugar
1/4 teaspoon salt
1/3 cup vinegar
1 cup water
1/4 teaspoon black pepper
2 heads lettuce (she likes boston or bibb lettuce) leaves washed and separated

Cut bacon inot small pieces and fry in medium skillet until crisp. remove from heat, and drain on paper towels. Add green onions, sugar, salt, vinegar, water and pepper to bacon fat in skillet. Cook over medium heat for 5 minutes. Put lettuce into salad bowl. Pour onion mixture over lettuce, and stir. Top with crisp bacon, and serve immediately. serves 4-6 people.

WILTED LEAF LETTUCE

2 green onions, sliced
4 slices bacon
1/4 c. salad vinegar
2 tbsp. water
2 hard cooked eggs, quartered

Tear lettuce into bowl, season with salt and pepper. Add sugar and onions. Fry bacon crisp and crumble. Add vinegar and water to drippings, heat to boiling point. Pour over lettuce. Toss until wilted. Add bacon and garnish with quartered eggs.
