Posted - Jun 23 2007 : 4:27:38 PM Wew have amaranth growing EVERYWHERE!!! I harvested it once last year and I will again this year. It works really well in breads!

Posted - Jun 22 2007 : 7:12:48 PM My reading says that it has no gluten in it so it won't rise if used 100%. But it works for muffins, pancakes etc...

Posted - Jun 22 2007 : 5:17:26 PM I grow amaranth every year and use it in my breads, rolls and cookies to enhance the nutritional value. I still use white and whole wheat flours with the amaranth. I don't know if the bread would rise properly if I used straight amaranth. If you find out different, I'd like to know. A friend of mine uses amaranth flour to thicken gravies.
