Posted - Jun 17 2007 : 4:23:18 PM I don't like the creamy, over dressed coleslaw that you see everywhere.
The other day my sister took me and my mom (and Nora!) to a Mexican restaurant in Riverton, Wy. I believe the name of it was Del Sol. Anyway, coleslaw came as a side to the meal. It didn't look like coleslaw so I gave it a try. It was amazing- divine- wonderful! Insert superlative adjective here! I loved it!
All they did was use white vinegar, salt and pepper! A new favorite of mine! I am going to see if my mom has any cabbage and try to make it tonight.

Posted - Jul 10 2007 : 1:07:12 PM I make coleslaw with half cider vinegar and half mayonnaise. Also a bit of sugar and celery seeds. I find it's not really creamy, and it has enough of the "vinegar" taste so that everyone's happy.

Cole Slaw w/ Splenda
1/2 head green cabbage, sliced paper thin 1 Spanish onion, sliced paper thin 1 small carrot, grated 1 tsp. salt 2 1/2 packets SPLENDA no calorie sweetener 4 Tbsp. vegetable oil 4 Tbsp. Champagne vinegar 1 1/4 Tbsp. dry mustard 1 1/2 tsp. celery seeds
Combine the cabbage, onions, carrot, salt and half the SPLENDA. Set aside. Combine the remaining SPLENDA, oil, vinegar, dry mustard, and celery seeds. Bring this mixture to a boil. Pour immediately over the cabbage mixture and stir thoroughly. Cover and chill for a least one hour before service. Best when allowed to sit overnight. Serves 6.

Posted - Jun 26 2007 : 10:28:55 AM It wasn't overpoweringly sweet. But, it was a bit sweet. It's called sweet and sour cabbage. lol I love the sweet with the sour.

My Grandma used to make Rice A Roni - just basic simple Rice a Roni from the box, but she took the lid off her wood cook stove and set the skillet down in the hole, and it tasted SO much better - not at all like what I make on my electric range! |

Posted - Jun 25 2007 : 10:49:03 PM I love coleslaw with vinegar dressing. My Granny made the best -- she used vinegar, oil, salt, pepper, and a little sugar. I've tried to recreate but it doesn't taste the same. Better go practice.

Posted - Jun 23 2007 : 6:45:36 PM I'm lazy so I buy the precut coleslaw mix, but I did something simular that I loved!
1 bag of coleslaw mix (or you could also make the same mix you described above). 1 cup water 1/2 teaspoon caraway seeds 2 tablespoons apple cider vinegar 2 tablespoons splenda (or sugar)
Cook till desired tenderness on stovetop. (I did it in a ceramic covered cast iron 6 quart pot)
Any way....I just started making it like this this week. And LOVE it! It will be the only way I make coleslaw from now on. (ok maybe not always precut mix, probably red cabbage I shred myself next time! But, you know hat I mean. lol). |

Posted - Jun 22 2007 : 7:34:50 PM I made it last night and it worked pretty good. I put a handful of shredded cabbage, half a handful of shredded carrots, a dash of lemon juice and some apple cider vinegar. I then sprinkled salt and pepper on top and tossed. My grandma didn't have any white vinegar. I think it would have tasted even better with the white vinegar- but I am thinking of making it again tonight!

Posted - Jun 22 2007 : 5:51:15 PM I'm with you, Alee. I love the vinegar-y kind of coleslaw. That's what I was used to back East and out here it's sweet and overly creamy. I don't have a recipe for it though. And I won't try to make it with out a recipe. Anybody got one that calls for more vinegar than sugar?
