Would any of my farmgirl friends have a recipe for rhubarb jam? I don't want to mix with strawberries, but just rhubarb. My SIL asked and I told her that I knew just the group to ask, and that I would get back to her.
I might try it as well as there are a few garbage bags of rhubarb growing by my garden.

Michele, I just wanted to say thank you. I tried the recipe using jello, and WOW!
It was sooooooo easy, and quick. Everyone loves it, and is already asking when I will be making more.

Another good jam is rhubarb/fig conserve. Really sweet. We have the rhubarb and the neighbor has the fig tree - so we made a trade - I got figs from them for two jars of the jam when I was done.

Just harvested a huge amount of rhubarb this weekend. Froze part of it and gave the rest to a freind that has a local restaurant. They are going to make pies for their customers.

Here you go: I like this simple and quick recipe. I either can or freeze it.

5 cups rhubarb, cut fine
3-4 cups of sugar
3 oz box of red jello

Mix rhubarb and suagr and let stand awhile to form its won juice. Bring to boil. Boil till rhubarb falls apart (8-15 minutes). Remove from heat, Add jello and stir well. Put in jars and seal, or freeze. Michele

So EmmJay, just follow a recipe and when it calls for rhubarb and other fruit just add the rhubarb instead. I think that would work. MB

Mary Beth, the apple sounds delish, and I will be trying it. Thanks for keeping an eye out for me. I do have recipes that call for other fruits, and may try just not using another fruit. I do like the tartness of the rhubarb, and so does SIL.....I guess that is why she asked for a recipe.

In looking through my Jam recipes they all call for someother fruit and that is because the milder fruit adds sugar and can cut the bitter taste.You can use apples instead of Strawberries. though i love to just eat Rhubarb. You could add flavored or unflavored jello instead of another fruit. I do have a recipe with jello, I think. Would that help? I'm sure somebody has a good Just Rhubarb recipe. I bet if you just made a sugar, Rhubarb and water and add pectin you would have jam. I'll run through my recipes again. MB MB
