Hi!! According to the MJF calendar Wendsday is "Applesauce Cake day." I'm wanting to make one . Anyone know of good recipe? Thanks, Angela

Yes I do! This one has long been a family favorite. I originally got it off a Domino Sugar bag, but it's had a few changes and personalizations. It's moist and full of good things, and you can eat it plain, or sprinkle on confectioner's sugar, or frost with cream cheese frosting. It's very easy to make, and delicious any time of year.

Here you go!


Applesauce Cake

2 eggs
1/2 cup water
2 cups sugar
1/2 cup oatmeal
1 1/2 cup applesauce
1/2 cup soft butter or oil
2 1/2 cups flour
1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1 1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 teaspoon salt
1 cup chopped nuts such as walnuts or pecans
1 cup chocolate chips or raisins

Okay, now here are the hard directions. Dump everything in a bowl except the lumpy stuff like the chocolate chips, raisins, and/or nuts, and stir together. When you have them together, beat for about two minutes. I use my KitchenAid mixer and let 'er rip for awhile, but you can do it by hand. Scrape the bowl down, and add the lumpy stuff. Pour into a greased 13x9x2 pan and bake at 350 degrees for 50 minutes. Cool in the pan on a rack.

This cake is so good it will hurt you!
