Pumpkin Pie Biscotti
Makes about 96

3-1/2 cups all-purpose flour
1-1/2 cups firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1/2 cup mashed canned pumpkin
2 large eggs, lightly beaten
1 tablespoon vanilla extract
2 tablespoons butter or margarine
1-1/4 cup macadamia nuts, coarsely chopped

Preheat oven to 350 F. Combine flour, brown sugar, baking powder, salt, and pumpkin pie spice in a large bowl; stir well. In another bowl, combine pumpkin, eggs, and vanilla, stirring well with a wire whisk. Slowly add pumpkin mixture to flour mixture, stirring until dry ingredients are moistened. (Mixture will be very crumbly; it will gradually become moist after stirring.) Melt butter n a large skillet over medium heat; add macadamia nuts. Cook, stirring constantly, until nuts are browned. Remove from heat and cool completely. Knead or gently stir cooled nuts into dough. Place dough on a lightly floured surface and divide into 4 portions. Lightly flour hands and shape each portion into a 1 x 15" long log. Place logs 3" apart on lightly greased cookie sheets. Bake for 23 minutes; cool logs 15 minutes. Reduce oven temperature to 300. Cut each log diagonally into 1/2" slices using a serrated knife. Place slices on ungreased cookie sheets. Bake for 15 minutes. Cool completely on wire racks.

I have an old recipe for tea cakes that is the best. They come out perfect everytime. My mother in law, Zelda, made them and gave me her recipe that she got from her mother. Drop Tea Cakes 4&1/2 cups self rising flour, 3 sticks butter, 2 &1/4 cup sugar, 4 eggs, 1 teaspoon vanilla. Mix it all up and drop spoonfuls on cookie sheet, greased, bake 350 till edges turn brown. Remove & cool. They are the perfect little cookie.

I have the cookie book from Taste of Home. Haven't found a loser in the bunch yet. And since I'm not a "baker" - I'm a cook, there is a difference - that's a good thing for me.

Peanut Butter cookies! I got this cook book at a book sale that is one of those community cookbooks put together by Nuns. They have the best cookie recipes... must be from all of those bake sales. I should try to dig that up... I have been on a diet since Henry was born in feb... so I stopped baking. I buy the boys cookies and muffins since I know I wont eat those.

Hi all!
I LOVE baking cookies!!! Last time my hubby was in I tried the recipe for Neiman Marcus Cookies with the blended oatmeal and I got good reviews on them. My Dad told me they were quite possibly the best I have ever done, and my husband who is not a huge chocolate chip cookie fan loved them too. I must agree with you all though, Snickerdoodles are one of our all time favorites! There's nothing better than a homemade snickerdoodle and a cup of hot tea! I may just make a batch today after your posts!

Amanda, I love Snickerdoodles, too! I just plain love cookies! Doing the baking for the week was my "chore" from about age 11 on at home, so I have a good repetoir of cookie recipes. My favorite is a Danish Sugar Cookie that is rolled in sanding sugar before baking. It was so popular in the part of Wisconsin I grew up in, it seemed to be in every church cookbook. Melts in your mouth!

gosh .. jus' throw a little flour and sugar in a bowl .. with LOTS of nuts and CHOCOLATE .. stir it up with maybe an egg or two .. or some milk .. add some 'yogurt' if you wanna' feel a little less guilty about the sugar and chocolate! put some blobs on a cookie sheet and turn your oven on high .. until there is a slight 'burn' (the blacker the better!) around the edges and on the bottoms! that's about how i make cookies!
