Hey y'all,

Anyone have a recipe for freezer jam? We are picking blackberries this weekend, and I'm trying to locate a good recipe to use.

Here's a super easy one for strawberries too!
2 cups crushed strawberries
4 cups sugar (substitutes?)Mix and let stand 10 minutes in ceramic bowl.

In a small saucepan mix 1 box fruit pectin and 3/4 cup water
Bring to a boil , constantly stirring, continue for an additional minute, stirring. Remove from heat and stir boiled pectin mixture into the fruit and sugar mixture. Spoon into clean, sterilzed jars and seal.Let stand at room temp 24 hours. Refrigerate or freeze as long as you leave some head room in the jar! Makes 5 cups.

2 cups finely mashed blackberries (or sieved if you don't like seeds)
4 cups sugar (tubinado works fine or any organic sugar will work)
1 pack powdered pectin
1 cups water

Mix berries, lemon juice, and sugar. Let stand 20 minutes stirring occasionally. Stir the pectin into the water
bring to boiling and boil repidly for 1 minute, stirring constantly. Remove from heat. Add the berries mixture, and stir about 2 minutes. Pour into freezer containers, leaving 1/2 inch head space. Let stand til set, label and freeze. Yields 6 half-pints.

This sets up a bit soft.
