Posted - Apr 30 2007 : 6:30:30 PM Maybe someone could help to bring back a loving memory of my Granny. We grew up in North Carolina and my Granny would make a cookie called a tea cake (and I thought they were the best in the world). Has anyone heard of them and if so do you have a recipe that you would share. It's been 40 years (I can't believe it's been that long ago) since I had one and it would be wonderful to be able to make some for my grandkids. Your help would be appreciated.

Posted - May 22 2007 : 3:47:27 PM Russian Tea Cakes are my husband's favorite cookie. We make ours with pretty much the recipe Peg listed, but instead of pecans, finely chopped walnuts.

Posted - May 22 2007 : 2:31:13 PM Russian Tea Cakes
1 cup margarine, softened 1/4 cup confectioners sugar 1 tsp vanilla extract 2 cups flour 1/2 cup chopped pecans, toasted Confectioners sugar
-Cream the margarine, sugar and vanilla together until light and fluffy. Mix in the flour and pecans. Chill for 2 hours. -Pinch off small pieces of dough and roll into 1-inch balls. Place on an ungreased baking sheet. Bake in a 375°F oven until very lightly brown, 10 to 12 minutes. Cool on a wire rack. -Roll in confectioners sugar before serving. Store in an airtight container.

Posted - May 01 2007 : 09:59:57 AM Let me know how they turn out! They are very simple. Even if they are not exactly what you are looking for I think they are really good, and very easy! Great with a cup of coffee or some hot tea. I think I might make some today too........ not that I need them  |

Posted - May 01 2007 : 12:19:04 AM Welcome Michelle!! Boy..those osund great...my favorite type of cookies! I was wondering if Jane meant russian tea cakes too...they are good too!! I never think to make them except at Christmas time! I think I will make Michelles tomorrow though...sound yummy!!! Hey...be sure to go to the WElcome wagon section and post an introduction so everyone can welcome you properly!!

Posted - Apr 30 2007 : 7:03:14 PM Hello, this is my first time posting . I have a tea cake recipe. When I first moved to Louisiana my family here made them all the time. So my mother gave me a cookbook a church put together and I found a recipe I have stuck with ever since. Tea Cakes 2 sticks butter 1 1/2 c. sugar 2 eggs 1 TBSP vanilla 3 cups all purpose flour 1/2 tsp baking soda 1 tsp. baking powder Cream together butter and sugar. Add the eggs and vanilla, mix well. Mix flour, soda and baking powder. Mix the dry ingredients with the moist until well blended. Drop from teaspoon onto greased cookie sheet ( I like to sprinkle with sugar). bake at 350 for 10 minutes I hope they work well for you. These were my kids first cookies, they were soft and they loved them! |
