Posted - Jun 29 2005 : 4:06:17 PM If you want the granola to cluster, after you have added the fruit and let it totally cool, add 1 beaten egg to every two cups of granola. Mix until well coated. Let set five minutes and rebake at a slow slow oven until crunchy. The egg adds nutrition (and also calories) and acts as a glue to chunky it up a bit. You can also press into a pan, score just before baking, and have granola bars to die for. Joy

Posted - Jun 29 2005 : 09:13:18 AM I often do some variation of the following:
Preheat your oven to 300 degrees 4 cups rolled oats 2 cups chopped or sliced almonds 1/4 cup toasted wheat germ 1/4 cup unsalted sunflower seeds 1/2 tsp cinnamon 1/4 tsp nutmeg Mix this all in a large bowl
1/4 cup honey (use 1/2 cup for clusters) 1/2 stick of butter, melted (most folks use an entire stick, which would also help the cluster factor) Mix these together and then pour over the oats mix and stir well.
Line a couple of baking sheets with parchment, then spread your now sticky oats on the parchment. Bake until golden. Most recipes will recommend about 45 minutes and stirring a couple of times during the baking. I like mine less toasted and tend to take it out after 30 minutes.
Once you pull the sheets from the oven, let the mixture cool and then break it into the size clusters you like. Add the dried fruit and nuts of your choice. I usually add: 1 to 1 1/2 cups dried apricots, diced 1 cup dried cranberries 1 cup raisins
Store in an airtight container.
I usually eat mine with vanilla or plain yogurt.
