Posted - Jun 29 2005 : 08:31:00 AM Hey yall - My daughter and I can't currently digest cow milk or wheat - so I haven't been able to try a bakeover. I am going to try with my cornbread recipe which is all corn, and I do have lots of goat milk to make other recipes. But has anyone tried with spelt flower? CindyLou or MaryJane, if you ever look at these messages (when do you find the time - I can't understand that - amazing)would you ever consider making a spelt product for backpacking? I'd buy tons (okay, not tons, but lots). When I was a wilderness guide I took lots of "instant" quinoa, cream of buckwheat, sardines and kippers, miso soup packets, food from Asian restaurants, oats to soak at night - everything wheat-free but it was WORK because the food provided was government surplus yucky stuff (how they thought teenagers were going to hike 15 miles a day on that stuff I still don't see). Anyway, one spelt bake-over... hint hint hint. |

Posted - Jul 05 2005 : 12:09:23 PM Kirsten- My oldest daughter, my youngest son, and I are all Celiac. We cannot under any circumstances eat anything with wheat or gluten in it. I have found several good cookbooks that are wheat free. You can go to www.glutenfreepantry.com and find a lot of good products and cookbooks.
For bread I use a bread mix that I buy from a local health food store that stocks a lot of products that are wheat free.

Posted - Jun 29 2005 : 11:58:09 AM Hi Kirsten, My daughter and grandson can't eat wheat either. Missy uses spelt flour all the time. I think you can use it just like regular flour but I'll ask her and let you know.
