I was 'finally' diagnosed with celiac but now faced with finding gluten free alternatives for backcountry trips, camping, and on-the-go. I'm totally feeling lost on this one. Any advice for gluten free living on the road and off would be appreciated!!!!

Also, can I sand down and re-season my cast iron to keep for my gluten free cooking or do I need to start all over and buy new cast iron? Thanks so much!!!!

Amy, we love eating quinoa here. We eat it in place of rice in most dishes. Discovered it when looking for a rice substitute when hubby diagnosed with T2 diabeties.

I don't have Celiac but with my stuff going on (thyroid/hormone issues), my functional doctor wants me to eat GF as much as possible. Many days it is difficult for sure, cause I crave the stuff I am not supposed to have. However I do give myself maybe 2-4 gluten days in a month...but I try to REALLY limit it. I need to start eating quinoa again.

Quinoa is gluten free, has good protein and is one of the best grains one can eat. It's very versatile too as to what you can do with it.

Is quinoa gluten free? In one of Mary Jane's books there are some seasonings and toppings you can add to quinoa when you're hiking/camping. I think it's in her Outback book.
