Posted - Aug 26 2014 : 08:09:32 AM I was 'finally' diagnosed with celiac but now faced with finding gluten free alternatives for backcountry trips, camping, and on-the-go. I'm totally feeling lost on this one. Any advice for gluten free living on the road and off would be appreciated!!!!
Also, can I sand down and re-season my cast iron to keep for my gluten free cooking or do I need to start all over and buy new cast iron? Thanks so much!!!!

Posted - Sep 06 2014 : 9:19:03 PM Amy, we love eating quinoa here. We eat it in place of rice in most dishes. Discovered it when looking for a rice substitute when hubby diagnosed with T2 diabeties.

Posted - Sep 05 2014 : 11:00:30 AM I don't have Celiac but with my stuff going on (thyroid/hormone issues), my functional doctor wants me to eat GF as much as possible. Many days it is difficult for sure, cause I crave the stuff I am not supposed to have. However I do give myself maybe 2-4 gluten days in a month...but I try to REALLY limit it. I need to start eating quinoa again.

Posted - Aug 27 2014 : 12:23:15 PM Quinoa is gluten free, has good protein and is one of the best grains one can eat. It's very versatile too as to what you can do with it.
