I can't believe I read the whole thing! But I did! The book is The Cheese Chronicles by Liz Thorpe. The subtitle is : A journey through the making and selling of cheese in America, from field to farm to table. Liz works for Murray cheese and she travels all over buying cheese for them. She has a chapter on sheep milk cheese, goat milk cheese, Amish cheese, grass fed milk cheese, farmers market cheese and the future of American cheese. She discusses different types of cheese, how one tastes cheese and the best cheeses she has found. I never knew how much there was to learn about making cheese, selling cheese and tasting cheese. Google Ricki Carroll - she teaches cheesemaking and has a cheesemaking supply company, pretty sure you could find everything you need through her website. Barbara Kingsolver writes about her in Animal, Vegetable, Miracle.

Too funny - I just read a review of this book in Culture - which is a magazine just about cheese. I will have to check the book out!!

Hi Sara, I heard an interview with Liz on NPR a couple of months back. I was making cheese at the time! I have a small grade A dairy and I make artisan cheese. I will have to read her book too.
