I have canned them, but like frozen ones better. I also make dilly fiddleheads. These are yummy! Use a recipe for dilly beans thats what I used. My husband and grandson just loves them.

I love to saute them in olive oil and garlic with a bit of salt and pepper. Yummy!!!

I love fiddleheads and if you have never had them you need to give them a try!! We have discovered a wonderful area to harvest from. I will have an ample supply this year. One of my cookbooks says to blanch them before freezing. . that makes sense. I am going through my old cook books hoping to find a canning recipe for them. . maybe even a pickling recipe. Does anyone else know of any??

I read about them just yesterday. The book says to fast freeze them in a single layer on a pan then toss them into a freezer bag for frying later on. Hope that helps!
