I've got that one covered, and I can cook with all the savory herbs, but I feel somewhat limited in my "mint prowess"...I have chocolate mint and spearamint.

I'm also looking for uses other than culinary, like uses in potpouri (I don't know if mint IS a use for that) or linen sprays, or whatever...

1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
1 orange rind, grated
1/2 cup olive oil
1 cup red wine vinegar

Toss the cucumbers in a bowl with mint, parsley, and orange rind. Whisk the oil, vinegar and sugar together. Pour over cucumber mixture Cover and refrigerate for at least 4 hours. Toss again before serving on a very cold bed of garden lettuce.

Try the spearmint in a yogurt dip, like tzaziki, or do a google search for recipes featuring spearmint. My [Big Fat Greek] family uses almost a half pound of dried spearmint in each batch of dolmades (stuffed grape leaves) and kieftethes (meatballs). It doesn't taste like spearmint, but it's not the same without it. This is the "secret" ingredient that makes them taste better than any other recipe.

And yes, my family really is like in the movie, except they're crazier, have no sense of humor, and are mostly sober... scary.

Paint mint leaves with chocolate. Dry, peel mint off. Eat with mojitos. Maybe a bit too fussy. Have a chocolate bar with a mojito. he he he

We make a difference.

I used to make a simmering potpourri with dried mint, lemon-ey herbs such as lemon balm, lemon verbena or lemongrass, and some dried citrus peels. mmmmm!

How about bath teas? I love lavender and mint together in a bath tea.

Mojitos - OH YEA! I may have to stop for supplies on the way home . I do like to take mint and mix it with strawberries for after dinner. I simmer it in a pot on the stove to make things smell nice. Makes a great foot soak too.

I've never used mint jelly in glazes. Hmm. Sounds promising. SInce I don't eat lamb anymore, I haven't had occasion to purchase mint jelly (either the perfectly plain kind or the looser kind with pieces of mint floating in it --remember that?). I do miss it. Maybe I'll try glazing something. What are some things I could try it on? I'm coming up blank (Old Lady Syndrome)!

In a salad with tomatoes, oignons, romaine, feta cheese.
In a dip with yoghurt, spring oignons, mayonnaise, cuncumbers and gratted cheddar.
In mayo and garlic for a light sauce to go with fish.

I'm liking the way you think, Julie!!! And Alee, I have never once considered crumbling on the carpet...I'll have to try that. My cats will probably eat it before I get the vacuum out!!!

I love drying mine, then crumbling it up for a great carpet freshener. You can put a bunch of it in a container of baking soda to infuse the mint to the baking soda for a fresh bathroom cleaner...

And of course there is always Mint Juleps!
