Posted - Sep 18 2008 : 05:44:31 AM Well, last night I dumped out the first batch I had made without the pectin. I added 2 packets of chillover to 4 cups syrup while boiling. I didn't add any more sugar since I already had sugar in it. After I canned them up, I thought I might have made a huge mistake because the jam recipe called for 4 cups juice and 2 cups sugar and thought that maybe my 4 cups total might not be enough and I could end up with a super-solid. But that doesn't seem to be the case. When I tipped the jars this morning to check for set, it still moves but much much slower. I'm not sure if I have jam or just even thicker syrup. Maybe it will set up more in a day or so.
Anyway, I'm done with the plum juice. I had no idea how much work 2 gallons of juice would be! I still have 4 buckets of apples to put up and peaches are coming in Friday. I don't think I'll try jelly again. It was a lot of work and re-work. I'll stick with what I know and that's preserves and butters.

Posted - Sep 17 2008 : 4:10:48 PM Well since two farmgirls had problems with the plum jelly recipe from the canning books...perhaps it is faulty! So I don't think this is cheating if you were mislead (or even if you weren't!) Cheating would be buying it from the store after you tried to make it, right?
