Yeah, I imagine most things would taste good with garlic butter. I wish I'd had opportunity to try esgargot before I stopped eating meat. Sounds like a lot of work for a small reward though!

As I recall, esargot are served in the shell, and they are hot, having been cooked in seasoned broth. You pick the whole shell up with the holders, and then you use a tiny fork to wiggle the snail from the shell. And then you dip it in garlic butter. Sometimes they are served de-shelled, with garlic butter. I like them. But probably it's the garlic butter.

I'm trying to imagine how the holders work. Are snails served in the shell or out? It's never even occurred to me to wonder that before. ;)
