Hey Ladies-

I need your help-

I am trying to put together a homemade cookbook since I love to host dinner parties.

Do any of you have some great recipes for appetizers?

Perhaps we can do an exchange? If anyone was interested you could email me recipes and then I could put them into a printable format and then re-email the compiled list. Perhaps we could do one recipe a month and each month a new recipe category?

Any thoughts/comments/participants?

How about for the end of June and July we do Sunday Dinner Recipes and Yummy Desserts! Two for 1 1/2 months. Sorry it took me a while to mail out the email and get on this for June!

Oh My gosh that sounds wonderful, Kelly! I am going to have to make that recipe, and soon!

Anyone have a great recipe for traditional potato salad? I lovelovelove potato salad and am planning on having a big old dish of it in the fridge pretty much through out the whole summer. I would love to try different recipes since my fiance loves trying new foods as much as I do!

Oops...haven't been on for a while! I have one for a potato and green bean salad I just tried...


Balsamic Potato and Green Bean Salad

Tara Bench
From Every Day with Rachael Ray
June-July 2007

1 1/2 pounds small new potatoes
Salt
10 ounces green beans, trimmed and halved crosswise
2 tablespoons balsamic vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon sugar
1/4 teaspoon Dijon mustard
1/4 teaspoon pepper
1/2 cup extra-virgin olive oil
4 scallions, thinly sliced
2 teaspoons chopped fresh thyme, plus whole sprigs for garnish







1. In a large saucepan, place the potatoes, 2 teaspoons salt and enough water to cover by 1 inch. Bring to a simmer and cook until the potatoes are tender, 12 to 15 minutes. Add the green beans and cook for 3 minutes. Drain and let stand.
2. Meanwhile, in a large bowl, combine the vinegar, lemon juice, sugar, mustard, pepper and 1 teaspoon salt. Whisk in the olive oil until combined.
3. Toss the potatoes and beans with the dressing to coat. Using a fork, mash several potatoes. Toss in the scallions and thyme. Season with more salt and pepper to taste and top with thyme sprigs. Serve warm or at room temperature.


It was delicious!!

I like to make a tuna noodle salad for the hot summer months.

You Need:

Macaroni Noodles
1 Can Drained Tuna
1 Packet Zesty Italian Dressing Mix
Mayonnaise
Carrots
Celery
Onion
Garlic
Tomatoes
Any other fresh veggies you might have laying around.

Cook the Macaroni. I usually do one full medium size package. Chop all the veggies to a size you are comfortable with. Mix mayonnaise and Italian dressing seasoning together. Use enough mayonnaise to make a dressing for the salad. Then add tuna to the Mayonnaise mix. Add more mayonnaise if it gets to thick. Stir in macaroni to thoroughly coat with dressing mix. Stir in the harder veggies and gently fold in tomatoes. Serve chilled.

I love a good layered salad in a pretty deep glass bowl. You can layer anything beans, rice, onions, tomatoes....etc...
the one I always make is.....

1 cup cooked rice
1 small bag frozen peas, thawed (approx 2 cups...doesn't really matter though)
1 red onion chopped
big red pepper choped
2 cups cheddar cheese shredded (hey, I'm a dairy farmer, we like a lot of cheese!!LOL!!)
1 cup salad dressing of your choice....we use ranch

layer ingredients one at a time making sure that they touch the sides of the bowl so you can see how pretty the layers are. Make sure the last layer is cheese and top that off with the dressing. refrigerate for 3-4 hours, but it can be made the night before.........ENJOY!!

Guacomole Salad
Serves 4-6
perfect for Cinqo de Mayo

4 or 5 Ripe Avacodos diced ( I dice them in the skins to avoid mess)
1 red onion diced
4 garlic cloves minced
1 t. cumin
1/2 t. coriander
1 jalapeno deseeded,deveined,diced
juice of 1 lime
1 t. rice wine vinegar(don't use a different vin ommit it if you have none)
1 T extra virgin olive oil
1/4 cup chopped cilantro
Mix it all together let set for at least 1 hour to meld flavors
you can change amounts to taste for instance I put more cumin because DH likes it alot

serve over chopped lettuce with quartered ripe tomatoes and tortilla chips
will not store well but to keep put in a plastic container place plastic wrap over guacomole press all air out then put cover on container

This salad is healthy and delicious and uses lots of fresh ingredients.

Quinoa Tabbouleh

2 cups water
1 cup quinoa
1 pinch salt
1/4 cup olive oil
1/2 teaspoon sea salt
1/4 cup lemon juice
3 tomatoes, diced
1 cucumber, diced
2 bunches green onions, diced
2 carrots, grated
1 cup fresh parsley, chopped

1. In a saucepan bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.
2. Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, carrots and parsley. Stir in cooled quinoa.

Okay ladies-

I am going to compile the recipes tonight and get them put into a printable format. Please let me know if you do _not_ have Microsoft Word or a compatible program to open the file in. I will figure something out for you.

I also am going to format the recipes in two ways. One so that it can be printed off full page and one that can be printed off in 4X6 format to be pasted onto note cards.

So for next month we need a new recipe category! Since Summer is rapidly approaching with hot weather and fresh garden produce, I was thinking we need some Salad recipes!

Here are just some ideas:

Herb and garden style salads (and homemade salad dressing ideas?)
Pasta Salads
Jell-O/Chill-Over Salads
Meat Salads
Potato Salads

Here is what Dictionary.com defines a Salad as:
1. a usually cold dish consisting of vegetables, as lettuce, tomatoes, and cucumbers, covered with a dressing and sometimes containing seafood, meat, or eggs.
2. any of various dishes consisting of foods, as meat, seafood, eggs, pasta, or fruit, prepared singly or combined, usually cut up, mixed with a dressing, and served cold: chicken salad; potato salad.
3. any herb or green vegetable, as lettuce, used for salads or eaten raw.
4. South Midland and Southern U.S. greens.
5. any mixture or assortment: The usual salad of writers, artists, and musicians attended the party.

Okay, here's the BEST hot fudge sauce EVER - perfect over vanilla ice cream - it doesn't need another thing to make it wonderful!

Libbie's mama's hot fudge:

2 squares unsweetened bakers chocolate
1 can sweetened condensed milk
2 T. butter (has to be real butter)
1 T. real vanilla extract

In a small saucepan, carefully heat the milk and chocolate until the chocolate melts - stir it the whole time and make sure it doesn't boil - just heats.

Turn off the heat and stir in the butter and vanilla - this will give it a great rich flavor and beautiful "gloss."

The last (and most important step) is to remove the spoon that you stirred it with and give it a taste before pouring it over vanilla ice cream and ENJOYING IT!!!

Speaking of Nacho Dip...here's a family favorite!!

Taco Dip

1 lb. Ground meat
1 pkg. taco seasoning]
1 brick cream cheese
1 brick sharp cheddar, shredded
1 large tomato, diced
1/2 red onion, diced


Brown ground meat and add taco seasoning per package directions. Spread cream cheese on the bottom of a 9x13 inch pan.(I use 2 bricks...I like it best that way!) Layer meat on the cream cheese, then onions and tomatoes. Top with shredded cheddar. Bake in a 350 oven until hot and bubbly, about 30 minutes. Serve with tortilla chips.

This is a BIG family favorite and a must at our family gatherings!

"Oh, So Good!" CHEESE BALL

2 - 8 oz. cream cheese
1 cup thinly sliced ham or beef,
then diced
3 to 4 green onions, chopped
1 cup shredded cheddar cheese
several black olives, cut in forths

Mix together all ingredients. Roll into 2 cheese balls. Wrap in plasic wrap and chill overnight (if you can wait!)

Serve with Wheat Thin Crackers.
