Hi, all! Today I'm 43. I began the day having tomato pie with my husband, then my Mom and sister came to get me for a little shopping and lunch. We have a big event honoring my brother-in-law in November and my mom bought me something to wear for it. I'll be roasting chicken, new potatoes and cooking fresh green beans for my birthday dinner tonight. I enjoy reading and exchanging posts with you all!

And thank you so much for the yummy sounding tomatoe pie!! It sounds wonderful. I'm going to bake it tomorrow or Monday for an extra special treat! Gotta go and get some fresh farm tomatoes from Hanover in the morning.

Our dinner was wonderful and my middle son, 18, surprised me this afternoon by baking a homemade cherry pie. It was delicious; now I'll put on my new hiking shoes and go for a walk...

Sure! Here's Tomato Pie:
For the crust:
1 1/2 cups flour
1/4 tsp salt
12 TBSP butter, chilled, cut into 12 pieces
2 Tbsp. ice water
Very easy in food processor, or use your favorite crust -
Place flour and salt in food processor and pulse a couple of times. Add butter, using short pulses until mixture resembles texture of sand and small peas. Add water and process using several pulses until pastry holds together but doesn't form a ball. Turn out onto lightly floured surface. With just a couple of motions, push the dough away from you to mix quickly without overworking. Gather into a ball, wrap in wax paper, refrigerate at least 1 hour.
Then, roll out to fit a 9 inch pie pan. There will be extra hanging over edges. Refrigerate at least 30 minutes.
Preheat oven to 425. Place pie plate on baking sheet and bake 10 minutes. Trim any overhanging crust, letting scraps fall to sheet, bake another 10 minutes. Remove from oven and cool.
Tomato pie mixture:
1 cup heavy whipping cream
2 large eggs
3 tsp. fresh thyme leaves or 1 tsp. dried
1 clove garlic, minced
1/2 cup grated swiss
1/2 cup grated cheddar
salt and pepper
2 1/2 lbs ripe tomatoes
Whisk together cream and eggs in large bowl. Add thyme, garlic, cheeses, salt, pepper. Coarsely chop tomatoes and add to mixture. When pastry has cooled, fill with tomato mixture. Bake 10 minutes at 425, then reduce heat to 350 and bake another 55 minutes. Let cool at least 10 minutes.

Tomato pie is a savory pie, made with a buttery pie crust, filled with a custard of eggs, cream, swiss and cheddar cheeses, fresh thyme and chopped tomatoes, then baked just like a pie. It's one of this life's greatest pleasures!
