I just harvested a few radishes and some of my favorite baby spinach. Guess what's for lunch? Has anyone ever made wilted lettuce and, if so, what is your recipe?

I have enough greens to keep me going plus my DS & DDIL. Took some to Wenatchee this week and it was appreciated. My neighbors also love my greens. I don't have beet greens, but everything else in the mesclus and baby spinach pkg. I only have a small galvanized tub planted and it is producing like nobody's business.

I am in the Pasco Farmer's Market every Saturday from 8 to noon. Come see me, you wouldn't believe the greens I have. . .
Spinach, red leaf, green leaf, romaine, beet greens, amaranth reds. The farmers are doing amazingly well for as cold as it's been (helps keep the bugs down).
I sold sold out of greens to "wilters" and "juicers" last weekend, I got so excited when I saw your post.

Harvesting buttercrunch lettuce and spinach right now, and some herbs--made pesto the night before and used our lemon verbena to make this Gimlet recipe in this month's Cooking Light.

Making a wilted salad for dinner tonight, with my saved bacon grease!

I have mint and cherry tomatoes, Maybe I should check my strawberries, but I think I still only have flowers on them.

I've harvested some rhubarb, still a bit early in the Pacific NW to have much of anything yet, oh, I have chives I could harvest too :^)

Harvesting sugar snaps has come and gone....now harvesting tomatoes......so many! Peppers are coming and cukes, too.

Wow!!! To be harvesting so much already!! Here in the North Country, we at least start everything inside in hopes of putting it all out by June 1st. Although this year we are all trying to decide what to do, the evening have been so cold.

Ohhh, to have a rhubarb pie. . . Yummmy!!

A lot of herbs already ... rosemary, lavender, comfrey, cilantro, oregano, basils, chives, garlic chive, cat mint and cat nip, sage, mints

As well as a few veggies, rhubarb, asparagus, onions

Raspberries started blooming over the weekend

And 8 new poults hatched yesterday!!

I harvested my years worth of wild garlic ( leaves, I leave the bulbs to continue the growth of our patch) Been busy drying them for the pantry.

Chives, comfrey, peas are all doing well. Just put out the broccoli yesterday and planted swiss chard and spinach seeds. Lettuce is ready to go out later today.

Still not convinced we are past our frost/freeze danger yet so I am sticking with the "cold weather group" for now. ( must admit that the tomatoes, peppers and the squash are all begging to be planted too!)

The Spring has been cold and wet and my poor garden is feeling "blue" right now. I have canned 24 pints of asparagus which is way cool. The sage, chives and mint are leading the pack for growth. But the poor tomatoes have suffered through three or four frosts in May and are struggling. OH, fresh strawberries sound heavenly...drooling!!!! Peas, beans, potatoes and onions are doing well.

Nothing going on here, some mint I could use in iced tea. It got real hot here for the last few days but cool and rainy today. My lettace has popped up but a long way to cutting.

We have been eating onions and some tomatoes for our garden. My husband and I had a nice afternoon Sunday when we had a nice cool front come through and we went out to the back pond and picked a half of bucket full of dew berries. We are waiting on the wild plums to ripen. We have also had a couple of strawberries.

I have been picking strawberries for a few weeks now. Gotta go get more for some friends today. But my garden is slow this year. I'm going to have to replant soon.

My MIL made the wilted salad. I cannot bring myself to even try it. My hubby loved it. Sorry, hubby.

Wow! So happy that so many of you are able to harvest some goodies already!! We had a hard frost last night, temps were around 26 - 28 degrees. Out door planting is not started until June 1st here.

That strawberry sounded divine! To have fresh radishes, lettuce, spinach. . . my mouth is watering!!

Our chives are up along with the first row of peas, the comfrey survived the winter and the garlic is coming to life as well. Looking forward to planting my big garden in a few weeks!

I haven't had Wilted Lettuce for years and years. My mother would fry bacon cut in tiny pieces until crisp. Then she would put a half cup of vinegar in the drippings, add an egg or two until they curdled. Then she would add the lettuce and wilt it. It was so good, but so filled with cholesterol that I can't bear the thought of makig it again. I have very high cholesterol if you haven't guessed.

I'm so pleased to see the harvesting so early. My spinach has really grown with the two days of 90 deg plus temps. Wonderful time.

I have fennel, parsley, rosemary, sage, chamomile, two kinds of basil that have really grown well, and I have been cooking with them already. I am still waiting on the rest that was planted. The grapes, figs, dates, limes and oranges have all come in from last year, but are not ready to eat yet. I am really excited about the coffee beans, checking them daily. I hope I didn't kill them.

We've got mint, chives, green onions, loads of rhubarb, just starting to harvest lettuce and beautiful tender spinach. My first planting of peas failed (because of all the rain), but I've replanted and now can look at the pretty young pea shoots.

Leslie -- One strawberry? Cut in four pieces? That would be just a great children's book!!

Rhonda, I'd love some of your asparagus!! And I'm planning to use the pea shoots in a salad when I thin the rows.

I'm making rhubarb bread every couple of days. Always tinkering with the recipe -- adding more rhubarb, using some rolled oats, throwing in some sliced strawberries, subbing some applesauce for some of the oil. The last mini loaves were heavy with fruit and so moist it was like a bread pudding.

Time to go pick some more rhubarb and make more bread tonight.

We've harvested ONE strawberry! SO exciting, since we've never had a garden before. We cut it up into four pieces and we each had a bite~~~melt-in-our-mouth delish!

We only have asparagus and some pea shoots (yummy on salads), but our radishes and lettuce should be ready in a couple of weeks, hopefully. Especially since that is when our CSA starts. It would be nice to have something for the first box. :)

Wilted Salad is my most favorite! I do fresh lettuce, baby spinach, small green onions, all chopped up and pour hot bacon drippings over it. I also, throw in some chopped almonds and chopped apples right before I serve. Yum, Yum.
