GURLZ .. SEE MY 'BLOG' FOR PICS OF KATIE'S MOS' WUNNERFUL SWAPS!

OH BE STILL MY HEART!!! when i returned from our fun Smoky Mountain trip last night at about midnight .. waiting on our front porch was a big box of goodies from farmgurl fren KATIE ... ohhhh . and jus' look at all the goodies!!!

now ... you know jus' returning from the Smokies .. this book grabbed my heart!
THIS edition is dated 1957 .. what a TREASURE!!!!
here's a few 'receipts' from it! (receipts is the olde-timey way of saying: recipes!)
SPOON BREAD
1 CUP CORNMEAL (i JUST bought fresh-ground cornmeal in the smokies!)
2 CUPS COLD WATER
2 TEASPOOONS SALT
1 CUP MILK
2 OR 3 EGGS (i, of course, will use THREE!)
2 tablspoons fat
Mix meal, water, and salt. Boil 5 min8utes, stirring.
Add milk, well beaten eggs, and fat. Mix well.
Pour into well greased hot pan or baking dish.
Bake 50 minutes at 375 degrees.
OH YUMM! i rmember my nannie's spoon bread from my childhood!
CRACKLING BREAD
3 cups cornmeal (yep! i'll have some left from that big bag we got!)
1 teaspoon salt
3 teaspoons baking powder
1 cup sweet milk (gotta' find me a sweet cow!)
1 cup broken cracklings (HUH????)
Sift dry ingredients, then add the milk and 'cracklings'. Form into small long rolls on a baking sheet, and bake 20 minutes in a 'moderate' oven.
(How many degrees would be 'moderate'?)
CORNMEAL DUMPLINS
(i'm making these soon!)
1 quart cornmeal 1/2 teaspoon salt
Wet up with cold water until stiff. Make into little balls, put them in a kettle, pour boiling chicken or beef stock or pot liquor from greens or hambone over them, and boil hard for nearly an hour. Serve with meats!

Katie - you did good girl! You are very thoughtful in your choices!

Hubby and I just returned from a week in the Smokies too! The colors were so wonderful and the weather was perfect. They could sure use some rain, though. We were talking to one farmer and his wife who had the cutest cabin in a valley north of Asheville, and there is such a shortage of water. I felt sad for them - they were struggling as much as pioneers! HAving to give their cattle to another farmer, as hay is $135.00 a roll!

We walked and walked - saw deer, picniced in the Nantahala Forest, and hunted out abandoned cabins for photos. We spent time with two different sets of friends, and ate like there was no tomorrow. One friend has a fantastic little antique shop in Dillard, GA. If you ever go through there, stop at Tippecanoe's on 441. She has some wonderful primitives and lots of "real" treasures in her shop, all with a story.

Frannie -- What lovely things you got from Katie. I love the books especially. And I noticed the pics of you and Hank in younger days. I gotta tell that Hank was a definite hunk!!!

Soooooo glad, Frannie. You have shared so much of your heart here, I had a very good idea of what you would like. Very very pleased here that these things have found a good home.

I'll be waiting for Kentucky honey and whatever. Happy happy!
