I haven't been tested for Celiac, no medical insurance, but a month ago I took myself 80% gluten (at the time I had no idea how much gluten is in everything), and within a week I felt so much better. My severe stomach cramps were gone! That alone has kept me from going back on gluten. When I eat something, I'm not aware there is gluten I notice I have small stomach cramps the next day. Who would have thought bullion cubes and soy sauce were no-nos?

My true enjoyment in life has been my cooking. Now I stress when I think about cooking or when we go out to eat. I never feel full when all I can eat out are salads. The things I can eat. .potatoes and rice are beyond boring to me. I thought about buying food from MJ's website but thankfully she has posted the food is prepared in a facility that also has wheat. The GF food I have found at the health food store has turned out to be pretty nasty. I know mostly I'm being impossible...I want the food I grew up on, not potatoes starch brownies.

Any suggestions on how I can enjoy food again?

There are a lot of websites out there about Celiac but I was overwhelmed by all the information. I live in a very rural town which has four eateries. One is closed by the time I want dinner, another is Pizza Pro, then two small places. One of them REFUSED to make any changes to their menu. I asked if I could have my chicken on plain rice not seasoned (some seasons are produced in places that likewise has wheat in it) the waitress said no. I asked for chicken without Swiss cheese (I don't like it) she said no. I asked if I could order off the breakfast menu...no. To say the least we no longer go to that place and I warn my friends about it too. The last place is a BBQ joint, not the greatest but they make up for it everyother way. They really try to work with me about my diet. I told them tonight how much I really appreciated it.

Jo, I eat meat. If it wasn't for that I would have been very, very depressed!

Sorry for rambling! Dragonfly if you have any questions I'll be glad to help...even though my knowledge is limited.

Cynthia, my future son-in-law has this problem too, so I'm learning about looking at label so I don't buy something with gluten in it and make him sick. It's in everything!!!! At least it sure seems that way. Georgette

I felt like death itself for about 5 days, then it got better, but it took about 6 weeks to feel really good.
I feel sooooooo much better now!
Don't give up!! you will thank yourself. I promise
What kind of pasta did you get?
I like the rice noodles better than corn, and Tinkyada is my favorite brand....

WOW you ladies are the greatest!!! I went to another health food store and bought GF pasta...I'm willing to give it a try. Kate, how long did it take you to feel better after you went GF?

I am not a diagnosed celiac either, but I have been on a strict GF diet for over a year, and I have never felt better!!
I have done all the dirty work & converted my favorite recipes...what do you want?
I have brownies, blueberry muffins, banana bread, zuccini bread, a really good (considering it's GF) white bread recipe, granola bars, and some super good chocolate chip cookies!!!

Can you eat meat? My boss has wheat allergy and eats chili-hotdogs (no bun) and burgers (no bun) - even orders steak and cheese subs, without the bread! Ask your restaurant server to provide the meal without bread, and ask them to let the cook know you have a wheat allergy - it's hidden in everything from soy to the coating on some french fries. She eats a lot of fish, grilled or broiled, and mashed potatoes if she can ascertain they are not made from flakes that have wheat added. Several restaurants she goes to offer an ingredient listing of their recipes, and will point out the wheat free alternatives for you if you ask. There is a lot more good eating than salads available to you!. Check out WholeFoods market or other organic type stores. More and more ecipes are marked wheat include or wheatfree now. You can also use rice flour or potato flour to make bread-ish type products. Also, several types of coconut macaroons do not contain flour. They taste really cake-like. And if you are a chocolate lover, there are flourless chocolate cakes. Hang in there, get educated, and you will be able to adapt easily. OK, maybe not easily, but you can adapt fairly well. At least you enjoy cooking so you are ahead of the game - my boss does NOT like to cook and she relies on navigating her way around restaurant food. She is also allergic to tomato and wheat combinations, something like spaghetti or a pizza is enough to send her into stomach cramps and anaphylactic shock. Good luck!
