Paula, Here's a recipe that you might want to try:
Vegetarian Bean Burgers
1/2 cup sour cream, 2 tbs. chopped green onions, pinch oregano- combine and chill.
15 oz. can kidney beans, drained, rinsed and mashed
3 tbs dry bread crumbs, 1/4 tsp garlic powder, dash of pepper, 1 egg- mix w/ beans.
Shape into patties.Fry. Top w/ sour cream mixture.
I think mushrooms would be a tasty addition! Onions, too.
Also, you could skip the sour cream topping. Sorry, it's not vegan, though. MaggieMB

i've been a vegan for almost twenty years
sometimes the smell of grilled meat make me salivate
but i just grill a veggie burger and i'm good to go
never like chicken or pork..only problem is my dh
he's not keen or being a vegan and will sneak off
to get a hot dog or burger LOL but i'm not opposed to cooking
whatever he wants for dinner.. i make lots of veggie
so it works out for us..

I was a strict vegetarian for 10 years (beginning in 1991) and then started to realize I missed bacon. My only stipulation to eat meat again was "if" I could find it responsibly raised, natural or organic and processed humanely. I paid more, but didn't eat meat everyday and it's been a nice compromise. I still fly by the same philosophy. Personally, I think I'd feel better if I didn't eat meat, so I'm streamlining more now to fish and lean poultry, but the occasional burger isn't off my list.

When Spring and Summer comes, though, I eat a largely vegetarian diet and this year's CSA membership will really test my cooking skills--and of course, tomato and mayo sandwiches, or bread and butter pickle sandwiches can't be beat :)

We seem to be heading more and more toward vegetarianism, though I doubt that we'll ever get there completely.
I occasionally eat chicken and fish and I often eat eggs but almost never eat red meat. My husband eats a little red meat a few times per week.

I hope to expand my garden this year. I am so deeply in love with oven roasted root veggies and local organic goat cheese. I could live on that.
So far I'm planning on red beets, golden beets, carrots (carnival variety), rhubarb, parsnips, decorative corn (just a few stalks to remind me of the Midwest, where I grew up), and maybe some lettuce.

I think I'll plant poppies too.

Summer tomatoes right out of the garden make it easy to forsake meat..........sometimes.

We get our beef and pork via friends we know just down the road.

With my DH recent diagnosis of RA, he has seriously cut out pasta, his 2 PB&J's are now only 1 on gluten free bread, and he has taken up cooking. We have had tasty vegitable based meals for the past 2 weeks now. We are both lovn' it!

Not vegan but vegetarian most of the time.
I raise my own meat birds so I eat them :)

It's the tomatoes and cucumbers that I can't wait for! Nothing better in the whole world than a Jersey tomato!
