Hi, I've been an insulin-dependent diabetic for about 11 years and have been doing okay with it. However, a few months ago I started having other symptoms and have been working with my doctor to figure out what the problem was. I got the diagnosis today - celiac disease! All I can think of is what I'll have to give up (although it's not really much different from my counting carbs diet), but this means no more bread baking, and a lot of restrictions on wheat, rye and barley.

Is anyone else dealing with this, either for yourself or a family member? Any shopping tips, or recipes to share, or just plain pep talks? I could use any of these! Thanks.

Thanks everyone, I just had my first gluten-free Thanksgiving and the only thing I didn't have that I really wish I could have was my brother-in-laws fabulous stuffing! But I managed to create a very full plate and really didn't miss those things I couldn't have -- I think because I'm actually feeling so much better without them! Just like dealing with diabetes, it's a learning process, and I'm grateful to have farmgirl friends to make such terrific recommendations! Thanks!

Even though I'm not celiac, I check/read this blog by Shauna James Ahern everyday: http://glutenfreegirl.blogspot.com/ She also has a cookbook out that might be helpful to you. Also, on a Mennonite cooking website http://mennonitegirlscancook.blogspot.com/ they have several gluten free recipes that look awesome! Another place that you might try for gluten free products is a bulk food store.....although there is a risk for cross contamination. Good luck finding stuff that works for you!

It's actually not so much the sugar, as the carbohydrates that I need to monitor. Pancakes and such are a rare treat, but if I account for them I can have them. I will try one of the mixes you recommended, thanks. I can see that this will be a challenge, but I'm already feeling a bit better after two days, so I can see that it's worth it!

Nice to hear from another North Carolina girl!

Hey, just thought I would let you know what I have tried thus far. Namaste Foods has a really good pancake mix. Also Pamela's, Glutino, Kinnikeet(I think that is it) and Bob's Red mill all have yummy things. Not sure about the sugar content in these things though. I have never had a problem with sugar.

Thanks for the tips, and I've bookmarked the websites to delve into later. I went grocery shopping today and did manage to find a few items that were actually marked gluten-free - I guess I just never needed to look before. I bought some rice noodles and rice crackers. I guess once the panic goes away, I'll be okay.

Thanks for your help!

Hi Ya'll, I did the gluten free diet for several months to see if it would help my CFS. no improvement there, but I did learn a few tips.

if there is an asian market near you, they are a great source of rice flour, noodles and other goodies, and they are really much more affordable than health food stores.

it takes some getting used to, but you can do it, and you will feel much better without the gluten. good luck and blessings Phyllis

Also, Jordan Rubin's "Patient Heal Thyself" , and his book "The Maker's Diet" are helpful resources.

I like these websites and I have used products from julesglutenfree.com They are pretty good. Most Whole Foods and Sunflower type markets have a good selection of foods and people who can walk you through the products.

Pamelas makes some yummy mixes.
