Well, I did it. Just ordered 2 bulk packages of the Budget Mix. Going to try to develop a week's menu of skillet breads, panbreads, bakeovers, etc. I'm going to be out of the house 40 hours a week or more with the new community center opening (since mainly I'll be running the gift store) AND I'm not much of a cook (don't like it) BUT I do like easy, hearty, efficient meals that can be made quickly and with few ingredients. I like to buy fresh veggies just every couple of days or so, so I think having a "base" of budget mix might fit the bill. And with 2 adults and 1 teen, we only eat 2 meals a day anyway.

Anyone else do something like that? See how you can get through a week on fresh stuff and budget mix (or your own baking mix)? I'd love to hear what your menu was with the mix as a foundation.

PS: Our weekly grocery budget is only $75 for three so I'm not thinking fancy here!

Oh dear I've caused a pre-caffiene ruckus! I figured the Bakeovers and panbreads would be the evening mainstay and scones and biscuits the morning staple breads. I bake once a week now (cookies and such) but I think I'll have to bake twice for morning breads so I'm not having to bake every morning.

Anyway it's been over 105 for more than a week now and is going to stay this way for awhile. Right now, we're on the tub o' ice cream diet! No one wants food. Too hot! I can do anything before noon, but after that, it's melting on the couch time.

That must have been before my second cup of coffee, you have to stay home with Mona, I didn't want you wandering off.
So Allison, let us know what good ideas you come up with.I still have some mix left, will have to order more soon.

Have I missed some posts someplace? I don't recall anything about you working 40 hours and running a gift shop. is this a temporary thing? Let us know what you come up with on the cooking front.

I plan to cook alot that way all summer too. I do more experimenting ( I do love to cook) in the winter..but get sidetracked(love to do lots of other stuff besides cook too!!) in summer and need to do easy fresh meals.
I have loved the budget mix and I am excited to try more recipes with it too...good stuff !!

That sounds like my kind of meal plan. I'm not really a "fancy" cook, either. I like to make some special things now and again, but for everyday eating, I just like good, fresh and real. I find that BakeOvers are a really good, easy and fast way to put something together, and I'm excited to try the panbreads, since I do love pizzas, and I'd like to be able to make an easier crust than the yeast kind.

If I come up with anything I think is particularly stellar, I'll let you know!
