1 cup oats (certified gluten free) 1 cup Gluten Free budget mix ¼ cup plus 2 T sugar 1 teaspoon cinnamon 1 stick (8 T) butter, cold, chopped into small pieces ½ cup fruit, chopped into ½ inch pieces (frozen, dried, or fresh) 1 large egg ½ cup buttermilk
1. Preheat oven to 375ºF. In a large bowl whisk together oats, flour, sugar, and cinnamon. 2. Using a pastry blender, cut in butter until crumbs form pea sized clumps or smaller. Toss in fruit. 3. Whisk together egg and buttermilk and add to flour bowl. With a rubber spatula, work around the bowl to evenly moisten the dough. 4. Turn the dough onto a rice floured surface and form into a 7-inch circle. You may have to knead it a few times to work it into shape. Brush top of dough circle with melted butter and sprinkle with sugar. Cut dough into 8 wedges. 5. Place on un greased cookie sheet and bake for 20 minutes, or until bottoms appear golden brown.

Posted - Apr 30 2008 : 9:41:40 PM These are great- I am so glad to have a gluten free mix that WORKS and tastes good! I have tried several in the past with, well...cardboard like results. We made them with frozen blueberries over the weekend and they were gone in a flash. I would never have guessed that they were gluten free and they were such a nice balance of flavors. Usually we do not do scones as they are just tooo sweet and heavy- these were not either. I can't wait to try strawberries and mangos;)
By the way- inside each pouch of budget mix there is an insert with at least a dozen recipes so don't hesitate to buy it if you are not sure of what recipes you would use it in.
