on the guy to come get my steer to take to the butcher. I am always waiting on something or someone here. I had a guy that was going to be here this morning at 8 but he called and said his son had a dental appt. he'd forgotten about. So my SIL works for a guy up the road that has a trailor and is supposed to be here soon. But he's not here yet. And of course I have to leave here by 9:30 to take Mrs. T to the Toyota place at 11:00 for a chech up on her car and I need to be at here house by 10:00 because she thinks it takes an hour to get anywhere from her house right there in town. I can get there ib 20 minutes.

So now I am getting anxious. I hate having to depend on other people to help me. My stomach is all in knots now. I do not want to have to cancel this appt. because I am so ready for him to go NOW! Not that he's a bad steer. I love that boy. But I have it all in my head that today is THE DAY to take him in.

Am I silly to worry about this? It just seems to always happen this way. People always seem to let me down some way or another.

goodmorning to you all, we had a swift rain this am and iys warm outhere,crazy fall for us. kris we aged the meat 14 days. it is excellent. the steaks are right size to fit in my cast iron skillet. we tried t-bone. we tried burger and a tip sirloin tenderized. all was great. i think the fact that it was not weened made a difference. also they let it stand and calm down in the field for about a half hour before shooting it. we have the bullet. it was a 45 that we used. not a lot of meat since a belted is dairy and it was 11 months. hung at 472 and we split it 2 ways.i paid $154.00 cut and wrap for my half. we live in an expensive area. the folks in calif. love it here. so the kill fee if we have it done is $75.00 wow is what i say. activist burned down the rendering plant so the kill guy charges that even if we keep all waste here.i have eaten a lot of beef being severe anemic and this is good meat.i would do another. we have dexters also.

Thanks ya'll. Alee, is that from the cow that was butchered at the farm you worked on this summer? It had to be good.

Sherry, I was wondering how the meat turned out with all the running that cow did right before. Did you age the meat long?

Gena, my butcher said the same thing. If I smelled onion on his breath a few days before to put him up quick! He said they can't even cut up meat that has the onion smell, it's that bad. It has to thrown out. He said they got one once that stunk up the whole place and was just wasted. So I was checking my boy. Monday the road guys were mowing the sides of the road and I smelled onions real good. So I went home and checked him but never smelled anything. So I guess he was good. The guy I talked to yesterday afternoon that showed me the carcass said he really looked good. Not too much fat. But of course ya want a little fat for tenderness. And Kansas will be disappointed. She loves fat!

I will have to wait some more now. At least 10 more days. I didn't realize that they actually hang all beef between 1-2 weeks. I have never had a cow done, only lamb and pig and they want you to come get them right away. I learn something every day around here.

Kris, We mainly raised him on pasture, with a little grain in the evenings. We didn't even put him up and grain feed him, like alot of people do. The butcher told me, there was no need to put him up to grain feed, unless there were onions in the pasture. There wasn't any onions, so off he went.
Our meat has been wonderful. Everytime I cook, I think, this cut of meat probably won't be as good. WRONG!!It is so much better than store bought.
Oh, we did feed him hay last winter. He was about 18 months old.
You are going to be very pleased.

hi girls, great job kris. we really do learn new things everyday we let our hearts open to what our god wants. some lessons are harder usually when i am resisting.so the belteds on the run beef was picked up today,yummy. it was even a little riled up when we had to shoot it in a blizzard. we could not keep it in a fence. it hung at 472 and we split it with our son who did all the running with his wife angie in her jammies and ug boots.they chased belteds for a night and next morning haha. it is delicous, since they were not weened milk fed beef is good. good job sherrye

Kristin- we got to eat meat from a cow that was purely grass and hay raised and Doug and I both agree it was by far the best beef we had ever eaten! YummY!

Chandra, I got to Mrs. t's house about 10:15 and we left a few minutes later. Got to the Toyota place at about 10:45. Not bad. But I just hate being in a hurry. I didn't even eat breakfast or brush my teeth. So I was so hungry. And my neighbor lets me use his pasture. We have 3 acres here but sometimes that's not enuf. It's probably about 3 acres and perfect for a few cows or a bunch of goats. But I can't seem to keep the goats in there. They always find ways out. Now I need to find a friend for Maize Mae Belle. the heifer. I don't want to breed her yet. She's just 15 months. So I might try to find another heifer or a donkey.

Gena, how did you raise your guy? And how was the meat? I am so anxious to try mine. He was just grass fed with a little hay.
So I hope he's not tough.

Hi Kris, Glad you got all that behind you. Our cow was 300lb cut up too. They charged us .40/lb. That is so funny, to think we live in another state and the charges were almost exactly the same. Let's me know the price was fair.
I am glad my husband handled taking Jersey Mike to the butcher.

Wow, Kris, what you said is even better, God does work it all out..."And we know that all thing work together for good to them that love God, to them who are the called according to his purpose" Romans 8:28...I need to remind myself of that one all the time. So, did Mrs. T make it to the Toyota place on time? Very cool if that's the way it turned out.
Glad for you about the steak...I think it must be very rewarding to "grow your own"...we've grown veggies and someday perhaps we'll do chickens...we'd have to pasture a cow in someone else's field though...not set up for cattle, so it sounds like quite the accomplishment to do what you've done! Way to go farmgirl!

Ok, I was going to say after I said people always seem to let me down, that God never does and things always work out one way or another. So thank you, Chandra, for reminding me about that. And I LOVE the serenity prayer. I need to say that ALL the time because it's so true. God always seems to work things out regardless.

And Teresa, if I am going to keep doing things like this, yes, I do need a trailor of my own and just do it myself. I need to start looking for a good small used one. I do most everything around here because I have to. Hubby is only here about every other weekend. Then he just wants to ride the Harley.

All right. I'll tell ya'll what happened now. The guys came, got the truck and trailor all the way across the muddy wet pasture. Backed it up to the pen nice and perfect. Cowboy walked right into the trailor in less than a minute! Just that easy. I have never had an animal load that easy. Ever! So I thought all we had to do then was get him to the butcher. But the truck was stuck! It took 20 minutes at least to get it out of there. The pasture is a mess now.

So got him there in a stall. There were lots of other cows there. I saw a guy out of the corner of my eye stradle a stall with a cow in it, them bang! shot the cow. Just like that! Scared the crap outta me! I was just amazed. Right there in front of me. Man. I could not even think after that. Then I had to go inside and talk to the guys wife. She's inside skinning that cow while I'm trying to talk to her. It wasn't that bad a thing. I was just not prepared. You probably are saying that it's a slaughterhouse. What did you think you'd see there? Well, I guess I just wasn't thinking I'd get to see the whole thing. I can handle the rest of the story, just not the killing. I'm fine after that.I even went back later and got to see Cowboy hanging in the cooler. These guys are good and fast. When I went back it was almost 4:00 and he was out cleaning the holding pens. So Cowboy did not have to wait long. I was worried he'd be all stressed having to hear the gun shots and all the other animals. Especially after being out here where it's so nice and peaceful. Poor guy.

So hanging he only weighed 413 pounds. I will maybe end up with around 300 pounds of actual meat all cut up. Is that just $123.00? At .41 a pound. Not too bad, I guess.

So I will get the meat in a few weeks. I can't wait to have some steak again. It has been years.

Kristin, I would say buck up and do it yourself. Loading an animal in a trailer and taking it to the butcher, vet, or where ever, is not hard. Try to be more selfsefishant, you will find yourself being proud of yourself, and then no one can make you late , but you.

Kristen, in my experience, God is always faithful, the One consistency in the universe.
Because we live in an imperfect world, people, places and things, will all, eventually cause disappointment.
So, while I may still "feel" the emotions and physical responses to those emotions when someone is late or causes a change to my schedule, I am learning to be less controlled by it. I just try to think about what I said above, realize that perhaps I'm being spared from something I don't know about, or that God has something better planned. I still have to remind myself to get my eyes off the problem and get my eyes on God, accepting a situation may only happen in God's timing. Is it possible to see it from that perspective? I hope you won't be offended by faith words, it's taken me a long time to get to the place where I don't let circumstances bother me so much, and my faith has helped with that. I will pray that all goes well for you today.
