How long do you keep fresh eggs to hard boil?
- too fresh and they are a pain to peel!
How long is too long to keep fresh eggs in the fridge anyway?

I always keep a dozen eggs in a seperate part of the "egg" fridge just for boiling. I let them get at least 2 weeks old first. Sometimes it's hard to keep "that" dozen from getting sold. I figure if one of my customers want old eggs for boiling, they can buy an extra dozen and store them in their own fridge. I'm really rough on my customers, arn't I? Once in a while, I'll find $2 in the egg fridge and a dozen eggs gone. I have learned to mark my egg carton, Not for sale.

Great advice ladies, thank you! We have only had chickens for a year now, and I was having a terrible time hard-boiling them! Will try these techniques for sure.

Try steaming them as in MJ magazine article tells in Dec-Jan Issue.. I tried it and it works great. Page 16 Under

if it's something like egg salad you're wanting, we usually do it like poached eggs and crack them open right into the boiling water, boil long enough to have hard centers then drain and chop up. That way you don't have to peel them or wait till they're peel-able

I also read that a T of vinigar in the boiling water will help.

I also would boil one day and peel the next with fresh eggs seemed to help too.

I usually let the eggs age at least 10 days before I try to boil them. Usually they peel pretty well if they are 10 days old. I have tried them earlier and they always stick horrible. I have kept fresh eggs stored at least 3 months and they were still fine. I collect the eggs twice a day and make sure they go in the fridge the same day.
I know if you want to keep them longer they have some kind of oil that you put on the outside that is suppose to make them keep a long time. Never had the nerve to try that one......lol.
