This should probably be in the kitchen section, but I noticed some other messages that were similar so,... I am planning on butchering all my old (3 years)hens (I think there are 13 of them). I recently had to butcher one of them and when we stewed her up, her legs were SO tough. It had me kind of worried about all the others. I can't give the dog THAT much chicken! I am planning on canning them and was wondering if that would help or if there is something I can do in the butchering process. I usually let them hang out in the fridge a day before freezing or cooking them.

As usual I am playing one armed paper hanger, so much to do. I am still pursuing things to do from home, the job market here is the pitts. I had to leave my wonderful job to stay here full time, because again, there is so much to do. Like a hamster in a cage,lol.
Thank you for the information, as usual you got the answers. I was very proud of myself, I grew from seed some heritage tomatoes which were wonderful. I also had one Roma tomato plant, well I had enough tomatoes and then some. I also had one Jalapeno plant that had an incredible amount of peppers. Next Spring I am going to plant a little larger and am hopeful that I will be able to preserve what I grow. I love fresh vegetables and knowing there are no chemicals on them will be super.

Hi Duchess!

I haven't seen you around for a while! Welcome back!

The Ball canning book is an excellent guide for the canning novice. I canned spaghetti sauce and tomato sauce for the first time this year with it's help. It has easy to follow recipes and directions. I even use a water bath canner!

Well, I do not have information on chickens, but I do have a question. I see 2 mentions of canning the chicken. I have never canned and frankly it scares me. Do you have a good source of information for a completly ignorant first timer??

Yep..it helps alot. I can mine up..cut into about 1" cubes (after roasting or boiling first) and cover with broth...same time as Wilma..but higher pressure since I live at high elevation. Just check any canning book for time and all for your area...it makes it great for casseroles, dumplings and enchiladas for sure..and soups..oh my!!

I pressure can old hens in qt jars cook for 30 min at 15 lbs pressure Makes a good pot of dumplings
