Hi, do any of you have experience with a community or incubator kitchen? Our ladies group has a community hall, with a kitchen. We would like to explore the idea of expanding into a licensed kitchen for use by individuals interested in using such a facility, women interested in catering, selling baked goods, jams and jellies, or whatever product. Let me know if you have done this.

Hi Ladies,
I have a friend who bakes in her church's county inspected/approved kitchen and retails her baked goods. I also worked with my sister while she was setting up her resturant's kitchen. Basically, any county approved kitchen will do! I would say your first step is to have the county health inspector come in & take a look at the space you are considering. They will tell you what, if any, changes or upgrades need to be made. Once you have approval you are ready to go.
Each county will have guidelines for inspection. I can tell you some things they look for here, but they may be very different where you are. Does that help?

I am really excited to hear what everyone has to say about community/nonprofit kitchens, too. A few farmgirl friends and I are thinking about starting one in our town - we've spoken with the USDA and our local Rural Development "people," and they seem really supportive - I can't wait to hear all of your ideas!

Thought we could revive this thread and share resources. I came across www.kitchenchicago.com which is a community kitchen here, but they don't seem to have canning supplies, and are catered to people and small businesses that already have food licenses and liability insurance. Anyone know of any other resources in Chicago, especially with a focus on canning?

Thanks Debbie, I just see a need in our area. We can grow just about anything here, but with prices like they are, we need value added.

That's a wonderful idea. I would love to have something like this where I live. I'm going to look into this in our area. I know that our senior center has a nice sized kitchen.
