I am in a book club and looking for easy, fast, and great tasting candies to make. It is my turn to host and I would like to do candy, breads, and a meat and cheese tray. Also any other goody would be welcome.

Well, I did get the Andies ritz crackers made. My hubby thought they tasted just like the Girl Scout hin mints. My 5 year old helped me make them. They were a hit.

Saltine Toffee was a huge hit at our church fellowship time at our house this afternoon . . . time for singing carols together and sharing snacks! YUMMMMMMM!!!

Saltine Toffee "Cookies" are easy, tasty and lot less expensive than regular toffee.

4 oz. saltine crackers (I use the wheat or multi-grain saltines)
1 cup butter (no substitutes)
1 c. dark brown sugar
1 1/2 c. dark chocolate chips
1/2-3/4 finely chopped pecans, walnuts, hazelnuts or peppermint candy

Cover baking sheet with the saltines in a single layer (I use saltines to cover a cookie sheet that is 11 1/2 b 17 inches inside dimensions), which a little more than one "sleeve" of crackers. But I don't alter the other ingredients

Combine butter and brown sugar in saucepan, bring to boil and boil for 3 minutes, then immediately pour/spread over the saltines.
Bake at 400 degrees for 5 minutes.
Immediately cover with chocolate chips, let sit for 5 minutes. Then spread the chocolate to cover and top with chopped nuts. (You can gently press the nuts into the chocolate if you wish)
Let cool completely, then break into pieces.

I keep them in the frig until ready to serve and they do freeze well!

Here's a very simple recipe that is a new family favorite:

1 box of holiday themed Ritz or Townhouse crackers.
1-2 packages of Andes chocolate/mint chips (I get them at WalMart)

Melt the chips in a double boiler, dip crackers and set on cookie sheet lined with wax paper. Let cool.

These are really delicious and addictive. Plus if you get the holiday crackers, the design on the cracker will show through after dipping. Very pretty!

In the current issue of our magazine (Dec-Jan, "Home for the Holidays") we published a Candy Calendar with 12 months of easy candy recipes. They're all easy to make and are really yummy! Here's our recipe for Fresh-squeezed Lemon Drops.



FRESH-SQUEEZED LEMON DROPS
PREP TIME: 30 MINUTES, PLUS 15–20 MINUTES COOLING & DRYING TIME
COOK: 8–10 MINUTES
MAKES: ABOUT 7 OZS

1 3/4 cups powdered sugar, divided
1/4 cup fresh, strained lemon juice (about 2 lemons)

1. Butter a medium baking sheet (10.25" x 15.25"). Line another medium baking sheet with wax paper.
2. In a medium saucepan, mix 1 1/2 cups powdered sugar and lemon juice together. Over medium-high heat, bring to 285°F without stirring.
3. Remove from heat and pour onto buttered baking sheet. Cool slightly without disturbing until cool enough to handle (5–10 minutes).
4. Add remaining powdered sugar to a medium bowl. With buttered hands, pull candy mixture into a 3/4"-thick rope and cut into 3/4" pieces. Coat pieces in powdered sugar and transfer to the lined baking sheet to dry and harden (about 10 minutes).
5. To store, arrange drops in single layers between sheets of wax paper in an airtight container.

this stuff called something like cracker crack. It's basically caramalized saltine crackers. Look on pinterest for a recipe for it. I made it last year and every one loved it. It was just butter, vanilla extract, brown sugar, and saltine crackers.
