I love making cookies anytime of year but especially at the holidays. These are some cookies we didn't discover until last year but they have quickly become a favorite!! Please share some of yours!!

Chocolate Crinkle Cookies 1/2 c. + 2 tsp. oil 2 c. sugar 4 eggs 1/2 tsp. salt 2 tsp. baking powder 3/4 c. cocoa 2 tsp. vanilla 2 c. flour 1 c. powdered sugar Mix oil, cocoa and sugar; blend in one egg at a time until well blended. Add vanilla, salt, flour, and baking powder. Chill several hours or overnight. Drop by teaspoonful into powdered sugar. Roll and shape into balls. Place 2" apart on greased baking sheet. Bake 10 to 12 minutes in 350 degree oven.

My mother and sister don't bake anymore so we make a cookie care package of our traditional cookies every year as their Christmas present. Over the years, we acquired new "recipients", ie. someone in bad circumstances or family loss, that we added to our "deliveries". My soon-to-be ex lamented two years ago...."Whose paying for all these cookies!" So...I came up with the name "Ebeneezer Cookie Company" Here's our list now:
Chocolate Chip/Black Walnut Michigan Rocks (date/black walnut/cinnamon) White Chocolate/Pistachio Oatmeal/Butterscotch/Chocolate/Nut Snickerdoodles Triple Chocolate/Almond Peanut Butter Chocolate Toffee
and one candy: peppermint chocolate melts

Posted - Dec 11 2010 : 5:25:40 PM this is the BEST gingerbread cookie recipe ever so I'm posting it for anyone that wants it.
you can half it if you want, makes a bunch
6 cups unbleached all purpose flour
1/2 tsp salt
2 tsp baking soda
4 tsp ground ginger
2 tsp cinnamon
1 tsp grated nutmeg
1 tsp ground cloves
1 1/2 cups dark brown sugar (packed firm)
3 sticks unsalted butter (at room temp)
1 cup unsulfured molasses ( I use Grandma's brand) TIP spray measuring cup w/ pam then measure molasses (comes out better)
2 large eggs
mix flour salt baking soda and spices in bowl set aside. Cream butter and sugar together till fluffy. Add molasses and eggs and beat until blended. on low speed gradually beat in flour mixture till blended. divide in about 4 parts and wrap in plastic wrap, AFTER you wrap it press into flat thick disc. refrigerate for at least 2 hours.
preheat oven to 350
flour a work surface and roll out dough ( one disc at a time) to about 1/8 inch thickness. cut out with desired cookie cutters. TIP use a flat spatula to transfer cookie from work space to cookie sheet. bake about 8-10 min for smaller cookies 10-12 for larger ones, until firm to touch and just beginning to color around edges. cool about 1 minute before removing from cookie sheet. use spatual to transfer to wire rack, or paper towels cool completely.
decorate as desired.

Posted - Dec 10 2010 : 10:38:03 AM Ours are toffee cookies! I got the recipe a long time ago from a magazine - it may have been Better Homes and Gardens or Paula Deen, I can't remember. I didn't copy it down because it is so easy to remember!!!
You make your favorite chocolate chip cookie dough (or buy 2 tubes of prepared dough), spread it out in a large cookie or jelly roll sheet, then bake according to directions. Let cool slightly. In a small bowl, melt caramel chips with 2 tsps of water in the microwave or on the stove, according to directions on the bag, then drizzle all over the baked dough. Next you top with 1/2 bag each of mini chocolate chips and toffee bits (or crushed Heath bars). Let cool and then cut into bars. They are to die for! I have to make sure my DH and son get to them before I do, or ensure that I give most of these as gifts; otherwise they'll go right to my hips!!! LOL!!!
