Yes, the chocolate hardens pretty quickly. You shouldn't have to fridge them, but try not to stack them either, until they cool, so they don't stick together.

I have to say I'm not really a cookie person, but these caught my eye and I had to try them. The dough was so odd (stiff) it kinda threw me at first, but they turned out great. They are crunchy on the outside and chewy on the inside and the melted mint is very yummy.

We also love to make almond crescent cookies YUM!
This year I'm going to add gingerbread cookies to my tree, they are just so cute like that
and i'm doing a more home spun tree, so they will fit right in

For Christmas each year, my Aunt Mary bakes her traditional Santa cookies and ices them, uses coconut for his beard & he's the perfect jolly ole St Nick, this is my holiday favorite.
My 1st favorite any ole day of the year cookie is Death-by-chocolate, 2nd is molasses cookies, 3rd is ginersnaps.

i love anything with mint and chocolate so i'm going to make these! question: after you put the andes mint on and spread it around, does it "dry" pretty quickly or should i put it in the refrig for a couple of minutes to try and harden it like a shell?

Ok - so I finally found my recipe. They are called Chocolate Mint Marvels and they came from - of all places - an airline magazine. The airline had a cookie contest and this was one of the 5 winners.

P.S. - the notation says this is a family recipe from the contributors mom.

Here goes:

3/4 C butter
1-1/2 C brown sugar
2 C chocolate chips
2 eggs
2-1/2 C flour
1-1/4 tsp baking soda
3 or 4 packages Andes mints

Preheat oven to 350. Melt butter and brown sugar in saucepan over low heat. Add chocolate chips and stir to melt; put mixture into a bowl and let cool. Add eggs, and then mix in flour and baking soda. Chill dough for 1 hour. Roll into balls and place on baking sheet. Bake 9 minutes. Remove from oven and place Andes mint on top of each cookie. As the candy melts, spread it across the top of the cookie with a butter knife (I swirled with a toothpick). Makes 3 dozen.

As I recall the dough is very stiff, which made me nervous the first time I made them - thought I had done something wrong. So don't worry. Also, I found a small ice cream scoop (about the size of a quarter) worked really well. If the cookie is big just use 2 mints. Andes can be kinda expensive, but Hershey makes a chocomint chip which may work well too. It just has to melt.

The first time I made these with a friend they barely made it out of the kitchen they were so good.

i make these cut-out/sugar cookies that have apricot brandy in them...(just a little!) it's so funny, people will eat them and say how much they like them, but they get this peculiar look on their faces while trying to place just what flavor they are tasting! having just gotten the last of my thanksgiving crowd out, i didn't really start thinking about christmas.....love that idea of having a cookie exchange---i've never hosted one. do you just invite people over and ask them to bring 1 or 2 dozen cookies of their choice or is it better to be a little more specific? i used to go to one many years ago, but we all brought dough, etc and actually made stuff at a girlfriends house. i'm open to suggestions?????

I love the snickerdoodles as well. When I was young I remember there was a brand, maybe Archway, that made powdered sugar coated cookies that only came out during the holidays. Those were really good and I looked forward to getting them all year. My husband makes Swedish Christmas cookies that are very tasty, they have a hint of almond.

Lemon sugar cookies are lovely too and are all buttery and golden. I love Russian tea cakes too Jenny...gonna have to get off my duff and make up a bunch of tins of yumminess pretty soon

Big thick sugar cookies....cut outs for sure..but not with frosting on mine. I am not a big frosting fan. I have been craving them all week. Guess I have some baking to do!!

My mom makes cookies with red and green maraschino cherries in them. I don't think they're exactly "organic" but drool-worthy all the same!

Yum Susan... those look & sound yummy. I may have to try those. I may have to change my sugar cookies to add candy cane on top too. I like peppermint lots so the Andes Candies ones sound great too.

Last year I found a recipe for a chocolate cookie that had a melted Andes mint on top. YumYum. They are now at the top of our fav list. I'll look for the recipe and post in a few days.

I like frosted sugar cookies. My mom always flavored her frosting with anise extract, so those are always good to me. I also like macaroons drizzled with chocolate.
