Singing at the top of your lungs to the Indigo Girls on a sunny morning while making red lentil stew in the crockpot so dinner will be ready when we get home after a long day of errands in front of us - PRICELESS!
'Girls, you're so happy you weren't a fly on my wall this morning since my singing voice sucks, but MAN...Indigo Girls rock. My old time favorite group that I had almost forgotten about til I opted for a shuffle of just their tunes on the pod this morning. Jackson was dancing with me in the kitchen!
So fun. And so yummy! Here's my stew recipe, though I've changed it from the original recipe a gazillion times...

Main-Dish Lentil-Vegetable Soup 01-NOV-04 p44 Serves 4 -- Egg- and Dairy-free
This flavorful soup with its protein-rich lentils is substantial enough to enjoy as a main dish. One note: Even though most lentils today are picked clean, sort through them just in case to remove any debris.
If you’re pinched for time, skip the initial sauté that starts the soup; however, those few extra minutes (and the 1 extra pan it takes) greatly enhance the overall flavor. To add some greens with no extra cooking, chop some baby spinach, and stir it in just before serving. The heat from the soup will just wilt the spinach.
1 Tbs. olive oil 1 medium-sized yellow onion, chopped 2 cloves garlic, minced 2 to 3 carrots, peeled and cut into 1/4-inch dice 1 parsnip, peeled and cut into 1/4-inch dice 1 small celery root, peeled and cut into 1/4-inch dice 1 1/4 cups dried brown lentils, sorted and rinsed 6 cups vegetable stock or water 1 Tbs. tamari soy sauce Salt and freshly ground black pepper Minced fresh parsley for garnish
Directions:
1. Heat oil in skillet over medium heat. Add onion and garlic, cover and cook until softened, about 5 minutes; transfer to slow cooker.
2. Add carrots, parsnip, celery root, lentils, stock, tamari, salt and pepper. Cover, and cook on low until lentils and vegetables are tender, 6 to 8 hours. To serve, adjust seasonings to taste, and garnish with fresh parsley.
STOVETOP METHOD: Heat oil in a 5- to 6-quart pot over medium heat. Add onion and garlic. Cover, and cook 5 minutes to soften. Add carrots, parsnip, celery root, lentils, stock, tamari, salt and pepper. Reduce heat to low. Cover, and cook, stirring from time to time, until lentils and vegetables are tender, 1 to 1 1/2 hours. Taste and adjust seasonings, if necessary. Garnish with parsley, and serve.
PER SERVING: 360 CAL; 19 G PROT; 4 G TOTAL FAT (0 SAT. FAT); 65 G CARB.; 0 MG CHOL; 900 MG SOD.; 19 G FIBER; 12 G SUGARS

On my top 10 things of items I could never live without is my 1200 curfews CD...well really all of their CD's. LOVE THEM!!! My 2 boys have grown up listening to them and it cracks me up when they're doing something I hear them signing under their breath...."Chickenman...Chickenman...Chickenman hold my hand"

My husband actually has a voice like the deeper of the two, and when he was younger, played their songs in coffee houses...Sounds like I'd love the lentil stew more, though I'm copying the recipe for me, thanks for posting it! I'm so envious that you have a "Jackson". That was going to be our name if we EVER have a little one--get this: Jackson Paul Aloysius Lynch...He could be a civil war general, he could be an attorney, he could be a farmer. The name Jackson is GREAT!!!!
I do the same thing at my house--I HATE that my husband likes to sleep-in because I love to sing out loud on Saturday and Sunday morning while making breakfast and getting ready for my day.
