I'm visiting my son in college next weekend and traveling four hours by train. Do you have any ideas for a main dish that could be made ahead and frozen? Or a means of keeping it cold enough for four hours on the train? Thanks for any help you can offer. |

That was another great idea, Ann. I'll need to decide soon - by tomorrow, I think. It'll be such a surprise for those hungry boys to have dinner all set for them.
Note to Dawn: I was happy to see your message. I'm from the north side and very familiar with Chicago Botanical Garden. It's one of my favorite places to visit and you picked a great day. The bbq was so nice - family, close friends, and good food.

I suggest Lasagna, garlic or Italian bread and salad. Lasagna can be made even baked ahead then frozen. Along with garlic bread or good crusty Italian bread. The Lasagna will defrost durig the trip and keep the salad fixings cold until you get there.
If you don't have access to an oven cold lasagne is not to hard to take if baked in advance.

Welcome Bay! I live just 25 minutes south of Chicago. Have fun getting ready to visit your son. I hope you had a great time at your bbq today! We spent the day at the Chicago Botanical Garden. It was glorious! I hope you had a fun weekend too!

Another excellent idea and again didn't even think about it. My son loves soup and would certainly welcome it. I'm sure the others would like it as well. Canned soup just doesn't do it - for me at least!

How about a soup and bread night. Make a wonderful potato soup (which you can freeze) and grab a loaf of french bread. Wonderful for this time of year!

This is my first post, so I appreciate your response.
Mac and Cheese - great idea and one I wouldn't have thought of. When he moved in, I brought a chocolate cake to the boys. It got rave reviews and requests for more. So I thought dinner would be even more welcome.

How about baked macaroni and cheese? You can assemble all of it and freeze it instead of putting it in the oven. When you are on the train you should have it packed with those blue freezer packs so it doesn't thaw out too quickly. When you get where your going you can bake it for the potluck. HTH
